We have vegetables, cheese and fruit tables.  Then we have egg rolls, teriyaki chicken, scallops with bacon, stuffed mushrooms, and cajun chicken.

*Grilled Portobello mushrooms topped with Gruyere, ginger and garlic, finished with balsamic reduction
*Pan-seared Panko artichokes complemented with gremolata of garlic, thyme, parmesan and lemon zest
*Seared tuna with wasabi sauce on whole wheat-cumin crackers
*Beef cheesesteak spring rolls served with Asian ketchup
Globe grapes filled with blue cheese mousse and Gibraltar candied pecans
*Almond crusted shrimp cakes
*Zucchini and feta pancakes topped with a spicy cucumber relish

my friends did a couple of really neat vegetarian appetizers that I think we’re going to duplicate (fiance is a vegetarian) – avocado quesadillas and caramelized onion mini quiches! They were so delicious!

I chose 3 different passed hors d’oeuvres – smoked chicken quesadilla, fried raviolis and assorted mini pizzas.

We’re doing:

Cocktail Shrimp, Sushi Rolls, Veggie Tray with Dip, Fruit Tray, Antipasto Tray (olives, cheese cubes, pepperoni, etc), European Cheese Platter, Deviled Eggs, and sliced baguettes.

It’s going to be help-yourself as opposed to passed.

We’re going to have somebody shucking oysters and I hope to have a panini/antipasto station. I don’t know what else though, I haven’t met with the caterer yet.

We are doing it pretty simple.  We are getting pretzels from a local pretzel shop made into our initials with dips and cheese and crackers.

The pretzel shop is well-known in our area so it will bring some local flavor.  FH once said that the most romantic thing I ever did for him was get his name in pretzels and surprise him at work with them for his bday one year so it’s something special to the two of us too…

After much debate (and going to the hive for help!) We picked:

Micro-salads
Hazelnut Brie wontons
Lobster & Scallop Fritters
Fig & Asparagus Puffed Pastry
Grilled Black Satin Chicken
Lobster wings w/ ancho dipping sauce

lol it scares me that ours are so out there. Oh well… if no one likes it, I’ll take it to the hotel & eat it all that night.

Yum! These all look delicious!  We haven’t booked anything yet, but I hope to have some unique and tasty appetizers too.
