Our ceremony is at 2 and ends at 3pm. We want an evening reception, dark-ish outside, so we decided to have a gap in between the ceremony and reception. The reception will begin at 6.

I think a heavy cocktail hour would suffice.  Sounds like your reception might begin around 3pm which is too late for lunch but too early for dinner.  I’d do a heavy cocktail and *maybe* arrange for a cookout/clambake for dinner at 6 or so.
