If you had one at your wedding, what was your chicken entree?
We are doing a buffet style dinner with beef and chicken (and veggie option) to please the largest number of people. At our tasting we decided on beer braised short ribs (yummm), but we’re stuck on a chicken option. We tried lebanese kabobs with onion and tomato with a garlic whip, but the chicken was dry and we tried chicken marsala which was awesome, but people are weird about shrooms and chicken marsala is boring/cliche IMO. Our caterer will do just about anything on request, so I’m on the hunt for a chicken dish! I’d love to know what you served or a chicken entree that you’ve loved as a guest. Our wedding leans toward southern fare, but we can venture out of that category and we’re serving fried chicken the night before.

carolinabelle: we had a pan seared chicken breaste topped with fresh mozz and proscuitto in a port wine demi glaze with roaste potatos and asparagus

We did Chicken Marsala and I loathe mushrooms. I know the Marsala is cliche but the sauce was so freaking good, we couldn’t resist!

Our chicken option is Cornish hen with a blueberry balsamic glaze.

We had free range herb crusted chicken stuffed with chevre and topped with sundried cherries and balsamic glaze…..I wish I could have more right now!
