I think you get the most bang for your buck in Mexico. The airfare tends to be less expensive to Mexico than other destinations, and the hotels are spectacular.
I think it's wise to think about the experience that you want to have, and the details that are important to you, and look for those first, rather than shopping by price. All too often I see couples pick a place based on price, but it's not the right place for them at all. So think about the details first, and price second.

We have a serious lack of direction too! If it helps, I just got a quote today from a travel agent for the below in the Riveria Maya / Playa Del Carmen area (for five nights, out of Chicago & in Sept).

We are leaning towards the Secrets Maroma. It was ranked #2 in the area on one website I saw! Also - my sister has stayed at the Excellence Riviera Cancun (not listed above) on a few occasions and can't say enough about it.
SLS79, I would love to stay at an Excellence, but it's out of the price range unfortunately, since I forgot to mention that we want six nights.

Bliss, thank you for your insight...we are leaning towards Mexico I think, at least most of the places I'm looking at are there.
Nevermind! We settled on an adults-only all-inclusive in near Playa del Carmen! Whoo! Six nights :)
The bad news? Our plane leaves at 6am the morning after the wedding!

We are looking to honeymoon in mid-October. We want all-inclusive, so that's pretty much the Caribbean and Mexico, USVI, etc. Our budget is $1000 per person with airport transfers, insurance, taxes, etc. Basically this means a "package price" of about $700-$800 per person before anything else, which is actually quite doable.
I don't think it has to be an exclusively adults only resort, but on that advertises that kids eat and stay free probably isn't our best bet for a honeymoon.
Also, we'd like it if it didn't take forever to get to from Nashville (western side of Mexico is out, for example).
I'd love to use CheapCaribbean.com since everyone on here and elsewhere has had such great experiences with them. Our main problem is that we don't have a particular place we're itching to go, so we have WAY too many choices.
Anyone have any ideas/experiences/reviews of all inclusives that fit the bill?
