    I'm just about to make chicken and rice with cream of chicken soup and green beans on the side. such a yummy comfort food! FI won't be home until late, though, so I'm eating alone and saving leftovers for him.

    Chicken, scallops and whole green beans! 

    I'm in the induction/shock piece of my diet plan - 3 days of 2 -3 pounds of protein a day with unlimited green veggies and 1/2 an orange in the morning and evening and eggs for breakfast. I still needed one more pound of protein.

    I needed to start "induction" again after my vacation. I'm back on the wagon again! 43 pounds gone...another 40 to go!

    Wow everyone is so healthy!

    Last night FI requested homemade breaded chicken parm (I think he was still feeling the effects of his bachelor party....)  So I am overindulging again tonight.  Oh well : )

    just sent mr. s out for vegan pizza.. with 7 toppings! eggplant, olives, fake sausage etc etc etc.  since we got back form the h-moon just a few days ago our kitchen is still a disaster.. exploding boxes from crate and barrel and tons of flowers in mason jars! no room for cooking.

    I had a disgustingly humongous lunch and don't think I can fit a normal dinner in me, so tonight it's a salad, a peach . . .  oh and a glass of wine.  I deserve it!  Tongue out

    I had leftovers from the dinner my roommate cooked last night - big pasta shells stuffed with beef, cheese and spinach, covered with marinara and mozzerella, YUM!

    panseared chicken with peas, asparagus and carrots in a mustard bechemel ontop of whole grain pasta.

    Butter lettuce salad with grilled pears and sliced brie and pinenuts tossed with a mango vinagrette

    and a glass of fume blanc :) yum!

    I'm not sure but I'm starting to get hungry so I'll have to head home soon for some dinner and more post-a-thonning.

    Everyone send me strenght vibes as I bravely drive poast the 100+ fast food places that I'd LOVE to drive through tonight on my way home....

    The kale pasta that was in Bon Appetit this month- kale braised in chicken stock w/butter, then tossed into a pan with caramelized onions and garlic in olive oil. Add cooked pasta, a bit of the braising liquid, toss with some good parmesan cheese and it's amazing! I don't add the lemon juice they call for though. This is also delicious with roasted broccoli added in! I use Jerusalem Artichoke linguine (gluten free) but whole grain is also good!

    and than, something made with beef; rice and corn..but that was after FI got home. When he wasn't and I got hungary around 6-7, it was pb & j all the way, baby!

     

    god, is it embarassing to the female race to admit: I can't cook.

    My BIL and SIL had their baby yesterday so we picked up Thanksgiving sandwiches for us all and swung by the hospital to meet my new niece!  The sandwiches (turkey, cranberry, and stuffing) were delicious, but would have been even better if they were warm and had gravy.

    Bean & Cheese & Grilled Veggie Burritos with Low Carb Tortillas.

    We are trying to do 1-2 meatless dinners a week, which is a stretch for the two of us that grew up in meat & potato households:-) This is a new addition to the already healthy kitchen I have: no white flour, no white sugar, no hydrogenated oils, no artificial sweeteners, etc.

    last night i went all out and made engagement chicken, Pioneer Woman's crash potatoes, asparagus and apple pie for my DF.  tonight he has hockey so I'm chowing on cheese and crackers.

    Sounds like a lot of you ladies had chicken! We had whole wheat rontini with meat sauce which was cooked in the crock pot all day! LOOOOOVE my cp!

    Oh lol... I haven't been home yet, so I had a vanilla cupcake w/ pink buttercream & sprinkles AND a lemon cupcake for dinner. Lately I've been eating a cupcake for dinner a few nights a week. Great for my bridal figure... sheesh.

    I love to cook, but I only cook a few nights a week. I need to start making meals ahead of time... my schedule has been so crazy the last few weeks.

    FI and I ate at a Mediterranean restaurant in town for the first time tonight and I went wayyy overboard.  Sample appetizer platter, chicken souvlaki, wine AND dessert - pastry with fresh fruit and whipped cream.  yummmmmmo!  I posted on here earlier tonight that i feel like a blowfish now LOL.
