I made a fantastic indian caulflower-zucchini-yam stew over saffron basmati rice (if I do say so myself). 🙂

Im trying to eat more veggies and Indian food makes them fun for me. 🙂

My dinner will most likely be:

Fresh watermelon (YUMMY!)

Lean Cuisine/Smart One

Maybe some Chobani

I made spinach walnut pesto last night so I’ll prob just boil some pasta and throw in some chicken/parmesan cheese.

We have premarital counseling tonight so it’s a leftovers day! FI will be having leftover teryaki chicken that I made last night, potato salad and watermelon. I will be having leftover quinoa with chickpeas and watermelon!

Me and the FI are trying to eat nothing but salads for dinner this month since we wed on 5-7-11 so tonight im making a mexican salad with some left over pulled pork we had from the crockpot…..anyone else have some yummy salad recipies they wanna share? Smile

@Lolasmomma: I usually have more interesting dinners, I just hate cooking for 1.

FI has been away on business for almost a month so I’ve been having “boring” dinners while he’s gone. Trying to cut back on take out/deliver and don’t feel like cooking just for little ol me since I’m not the biggest fan of leftovers.

I’m waffling between home made stuffed clams or chicken braid. I love chicked braid because it’s like a pastry but I also need to use the ingredients for the stuffed clams before they go bad!

Sauteed chard with garlic and preserved lemons, chicken sausage (on the grill if we can stand the rain, in a grill pan if we can’t), and either whole wheat penne or some rice pilaf.

Tuesdays are 1 of the 2 nights each week I get to eat real person dinner these days–I’ve been working nights which sucks cause I teach, and I can’t really teach and eat dinner at the same time.  Booo.

I’m doing arctic char and julienned veggies (pepper, carrots, and snow peas) cooked in parchment paper in the oven. It keeps the fish moist and makes clean up so easy. And maybe I’ll do a mixed greens salad on the side.

@debaby01: That sounds awesome!  I’ve been doing salads for lunch in preparation for my dress’ arrival coming up; I know I’ve gained weight since I ordered it and I want it to fit.  I’ll have to try yours!

Lately my favorite salad is spinach with cherry tomatoes, snow peas, bell pepper, and seedless cucumber, chopped together with some grilled marinated chicken breast and topped with olive oil and minced preserved lemons OR black fig vinegar. FI puts freshly grated parmesan on his cause he can’t resist cheese and has the world’s best metabolism (color me jealous). The snow peas make the salad!
