I’m really excited about what we’re having and I just wanted to share and hear what everyone else is having!!!
We’ll be eating meatloaf made with ground turkey instead of beef, parmesan roasted potatoes and salad. I’m starving and can’t stop thinking about it haha.

Yogurt! I’m on my own tonight–DH is out with work peeps, so it’s single girl dinner and trashy tv for me 🙂

Yum, my meatloaf made with ground turkey always turns out better than with ground beef! I just texted FI and asked what he wanted for dinner and his response was eggs. Haha, so breakfast for dinner tonight for us!

I am making spaghetti squash with a tomato sauce and a salad. I haven’t made spaghetti squash before so hopefully it turns out!

Penne with turkey, goat cheese, kale and kalamata olives and a salad made with mixed greens, mango, dried cranberries and pecans.
@linz09: spaghetti sqaush is easy and delicious. You can bake it in the oven or do it in the microwave in just a few minutes.

Beef Short Ribs, roasted balsamic fingerlings and pan seared pesto leeks for the DH and since thats a little heavy for me I made a super yummy new soup.
Its homemade chicken broth, onion and garlic pureed with cauliflower then spinach and white beans were added finished truffle salt. It came out better than I could have imagined!

@linz09: Did you cut it in half and take out the seeds?
If so, just run a fork across the flesh and if it separates into threads, it’s done. We like all our veggies on the crisp side so I don’t over do any of them. We serve it with salsa often -delish!

@julies1949: fruit in my salads is my new obsession. Its so tasty and makes them seem for fancy pants 🙂 Grapefruit and quinoa is a great combo!
