    I'm thinking a boring salad. I made some citrust-honey vinaigrette and it'll go nicely on a bed of lettuce with crumbled goat cheese, sliced cucumbers, and sliced grapes. Yes, grapes.

    I have a HUGE jar of pesto I need to get using, though! Maybe i'll marinate some chicken breasts for tomorrow =]

    i used to make pita pizzas in college with deli meat. low calorie AND filling! I should have DH pick up some pitas...i love love love pesto and goat cheese. It's such a vice.

    @krissybee, trust me, i do too. I have good food twice a week maybe....and on thursdays DH ALWAYS makes dinner. But i typically default to crock pot cuz me lazy =]

    I'm guessing I'm going to make something out of a bag.  My husband is gone until Wednesday and I don't like preparing a meal just for myself.

    Probably cereal :|.

    When I am home alone, I get on a cereal kick for dinner because I don't eat it for breakfast because of my commute.

    Turkey meatballs on whole wheat buns with roasted peppers.  Probably my favorite ever.

    @ejs- :P yay i'm glad to hear i'm not the only one!! i feel like a slug compared to you "betty crockers" out there. (and i'm jealous!)

    You had me at goat cheese. I buy it from Costco -- waaay cheaper. Now you have me jonezing for it & my favorite combo? Sundried tomatoes, goat cheese & pesto. It makes a great dip for anything. Ina Garten has a recipe for it in rolled up puff pastry. I might make the low-carb chicked for dinner though. Here's a great recipe.

    I'm making homemade pizza from The Pioneer Woman blog...the dough is rising in my fridge as we speak! Mmm eggplant/tomatoes/freshanddeliciousmozzarella!

    Either spaghetti or DiGiorno thin crust supreme pizza which I will add extra peppers and mushrooms to :) (leftover veggies from the chicken/rice stir fry I attempted to make the other night lol)

    Whatever I make it has to be fast cuz Castle comes on tonight and I'm not slaving over a hot stove for 2 hours hehe
