Mediterranean Citrus feta stuffed chicken, potato cakes topped with a whipped savory scallion cottage cheese topping, roasted zuchinni and a tomato and cucumber salad.

I started some boneless chicken thighs marindading yesterday in a mediterranean dressing (oil, grapefruit juice, zest, oregano, salt, pepper, lots of garlic) so it should be really tasty. Ill stuff it with herbed feta and sauteed spinach.

@enzoani4sale:  I always make them so different. My plan tonight was to add egg, touch of corn starch, (I avoid wheat as much as possible), sauteed onion and lots of garlic, oregano, turmeric, cayenne pepper.

I will lightly mash (keep some chunks for texture) cooked potatoes (cooked extra the other day purposely) and mix it all together. I keep the skins on.

I will preheat my cast iron in the oven and then spread the mixture in the pan. I will bake at 415 (same temp as the zuchinni so I dont have to wait) until the bottom crisps. Should take about 15-20 minutes if I use the convection setting.

Mmmm…. We’ve got leftover squealer meat (ground pork, beef, elk, and bison) so probably some squealer taco’s! Can’t wait!!!

I have no idea.  My meal planning this week basically sucks.. so it’ll either be (homemade) mac and cheese with ham and garlic bread, (homemade) spicy alfredo with blackened peppered chicken over penne w/ garlic bread or chicken tacos.

Baked salmon, cherry tomatoes and green beans with lime creme fraiche, and hasselback potatoes and a cucumber dill salad. It’s sitting on the stove now, waiting for my SO to get back from the gym so we can eat… I can’t wait much longer!

Tonight is wild mushroom ravioli with a walnut pesto, roasted cauliflower and zucchini and a hearts of romaine salad with balsamic vinegrette. For dessert, baked peaches with brown sugar streusel.

I’m making lemon garlic chicken (been marinating for 24 hours yum!), grilled zucchini and squash and maybe corn on the cob. It’s a grill kind of day.

Probably grilling burgers, sweet potatoes, and corn on the cob.  But we have tons of leftovers in the fridge so really should be eating those.  :/

Either baked tilapia on a warm green salad bed — cabbage, kale, peas, etc — or pelmeni stuffed with carrot and cabbage sauerkraut (they’re kind of like pierogi).  Depends on how much energy I find between now and dinnertime!  But pelmeni sound good to me, I just have to convince FI to help!
