    Haha I hate to be "the one" but...I'm ordering pizza! Someone left empty pizza boxes in a meeting room where I was working and the smell has just made me crave pizza...

    (don't worry, 11 months till the wedding, I have plenty of time to lose it :D )

    Homemade hummus with warm pita and citrus marinated chicken. 2 years in culinary school paid off some....

    My awesome crock-pot easy dinner that I put in the pot this morning and I will have left overs for the next two days for lunch and dinner.  It is very healthy and that way I don't have to think about what I will eat for the next two days, plan, plan, plan it is what will help you when trying to watch what you eat.  Chicken breast, Sweet potato, two red bell peppers, frozen broccoli, and onion oh and celery.  Cut it all up put 4-5 chicken breast in the crock pot, make sure to spray pot with pam first. Also add two cans of the 50% less sodiium, low fat cream of chicken cans and then 2 cups of water. Let it cook on low for about 10-12 hours and BAM... you have chicken that you can cut up with a fork and yummy veggies, oh and you can also make brown rice and then put your din din over the rice!

    Toucan, why would we be disgusted by a cupcake dinner?  Sounds delish to me :)

    I had a sleeve of Thin Mints for dinner last night, so that could be why I'm justifying it?

    We had delicious corn chowder at our favorite bakery. Mr had it in a bread bowl, I had just the soup. All of their ingredients are organic, and home-grown on the owner's farm.

    and then got ice cream.  They have different flavors in chile like "chocolate midnight desire" and chestnuts & cream

    Got distracted by a netflix big love marathon, so we just snacked all evening and had green smoothies and fruit for "dinner"!

    I've made the shrimp enchilads with salsa verde from the cover of this month's Bon Appetit. They are sizzling in the oven now. Yum!

    FI and I had Crabby Pasta

    8 oz. uncooked whole wheat pasta (I used penne)

    1 tbsp.olive oil

    1 sm red pepper

    1 clove minced garlic

    1 tbsp. flour

    8 oz crab (can use imitation I guess)

    1 twelve oz can fat-free evaporated milk

    1/4 cup Parmesan cheese

    sea salt and fresh ground pepper to taste.

    Start cooking pasta. Saute chopped red pepper and garlic in oil. Mix in flour. gradually add milk. Bring to boil and then simmer til thickened. Add parmesan cheese, crab and seasonings. Drain pasta and mix with sauce. AWESOME!

    Garlic Chicken & Broccoli

    Take some thinly sliced chicken breasts (total of about 4 pieces or as much as you can lie flat in a large pan) season them with salt and pepper and put them in a heated pan (medium heat) with about 2 tbsp olive oil. Cook for about 10-15 minutes, turning ever 3-5 minutes per side, or until cooked through. Add in about 3 cloves of finely chopped garlic. Cook for 2 min. Add in 2 cups water and 1 cup rice (or whatever your box of rice says to use for the water amount). Add in 4 chicken bouillon cubes and heat to a boil. Cover and simmer 15 minutes. Place 1 cup of frozen broccoli pieces on top of chicken. Cover and simmer for about 10-12 minutes, or until rice is done.

    Super easy, very inexpensive, and the best part is that there is only one pan to wash afterwards :)

    chickpea patties, with some green beans and zucchini I pulled out of the garden and some cucumber slices (since the garden is overflowing with them right now, we eat them all day!!!)

    Takeout chinesse... I think it's justified though because we're moving on Saturday and have all the plates, pots, etc picked up and I haven't grocery shopped in weeks because I didn't want to have to throw out all that food*

    *We might not have a fridge when we move. Well we have it, but it might not be installed... oh the joys of renovating!

    It's 9:30 and I still haven't actually eaten dinner- unless you count the brownies and pita chips I at at 5pm. Our eating habits have been so funky since coming back from the honeymoon. Totally not normal!!
