Nothing healthy…chicken strips, mac and cheese and grapes.  Just a laid back kind of night.

Penne alla vecchia bettola courtesy of the fabulous Ina Garten! I already made/roasted the sauce last night, so today I just need to reheat, add some spices and the cream (yum) and puree in blender. Cant wait…

Leftover pasta with vodka sauce (and a bunch of spinach wilted into it). We’re leaving town for a week on Friday, so we’ve avoided grocery shopping and are trying to eat up anything in the fridge that might go bad.

@Mrs Sarah McK: Thanks. It looks like there are quite a few people here who like to cook-or at least like good food!

I spent all day thinking about the enchiladas I was gonna stuff in my face 🙂

Naturally.. .when I got home, I found I only had one can of sauce and needed 2.

Booo.

So meatloaf it is, with buttered noodles and carrots.

If I lived in a ‘real’ town I would’ve gone to the store or picked something up… but it’s 20 minutes to the little store and 45 to a big grocery store.

So meatloaf it is.  FI’s pretty happy about that!
