@arielmerms:  I’ve made broccoli, feta, cherry tomato and roasted hazelnut salad for lunch tomorrow. I’ve also already made Monday and Tuesday dinners (I’m always too tired to cook early in the week!). I made a red Thai curry for Monday and a simple chicken stir fry for tues (chicken, green veg, soya, fish sauce, chilli, garlic, ginger and noodles). Looking for ideas for the rest of the week though. May make a Spanish omlette on wed (yum!!).

@arielmerms:  Mmmm, the penne sounds good!! Though it’s called aurbergine here so I had to check I’d the right veg!! Might try that one 🙂

I am trying to get back into the habit of eating healthier so I am eating a lot of greek salads and refried bean burritos (no cheese, greek yogurt instead of sour cream) this week. No real meal plans made. probably have falafal and couscous for supper tonight

I have a ton of pineapple that I need to freeze or use up soon, so some of it is going to be used to make Hawaiian pineapple chicken in the crockpot. (chicken tenders, pineapple, soy sauce, brown sugar). Then I’ll make white or brown rice to go with it. 

 

Then I’m going to try a sloppy joe recipe that my cousin has been raving about: brown onions, green bell peppers and hamburger, then add a big bottle of V-8 and Heinz chili sauce, let simmer a long time until sauce thickens. Supposedly it’s the best sloppy joes ever. I’m looking forward to finding out! We already have a big bag of potato rolls and tater tots to serve with it! Haha!

@arielmerms:  Burger King, candy, energy drinks and hospital cantine salads. I am working cuh-ray-zee hours next week.

@arielmerms:  Ha ha! Brilliant. Thanks for the recipe. You’re more adventurous than me!! I’d never think of eating soup fordinner. Though I have  it for lunch most days.
