    So my venue allows for cutom menus, which is what we are gonna go with because we dont like their set menus. I emailed them today and they said... Well just pick whatever you want and we can make it for you.... Hmmm.. ok. Hehehehe.

    I can think of all these foods that I love, but I dont wanna go overboard.

    Can I see your menu? pleaseeeee :D

    Here's ours:

     

    Passed Hors D’ Oeuvres:

    • Grilled Shrimp topped with Mango Chutney Served in a Fillo Cup
    • Chicken Sate Served with Peanut Sauce and Cilantro Chutney, passed on Bamboo Steamers garnished with Cilantro

    Stationary Hors D’ Oeuvres:

    • Maryland Hot Crab Dip with Artichokes, Served with Assorted Crudités (Veggies), Crackers, and French Breads
    • International Cheese Display with Brie en Croute with Dried Fruits and Caramel Clusters of Assorted Grapes and Strawberries

    Main Course:

    • Slider station: Chef Grilling Assorted Sliders, Crab Cake and Salmon Sliders, Hamburgers, Turkey Burgers, & Cheeseburgers Sliders
    • Baked macaroni and cheese
    • Mashed Potato Bar with Toppings of Broccoli, Cheddar Cheese, Bacon, Sour Cream & Chives, Mushrooms, Whipped Butter, Fried Onions, and Gravy

    Dessert:

    • Chocolate Display: Cascading Fresh Strawberries, Chocolate Covered Strawberries, Oranges, Bananas, Marshmallows, Pretzels, Angel Food Cake
    • Assorted Cup Cake Tower Flavors Mango and Raspberry Genoise, Decorated and Arranged on Tiers

    OH MY. Our reception is at Paula Deen's restaurant, The Lady and Sons and we are doing her Southern buffet. So we get a salad bar, hoecakes and biscuits, and this is the buffet:

    Fried Chicken

    Smothered Pork Chops

    Country Steak and Gravy

    Macaroni and cheese
    Yams
    Rice
    Creamed potatoes
    Butter beans
    Creamed corn
    Green beans
    Collard greens
    Squash casserole
    Black eyed peas

    And two desserts, a choice of banana pudding, peach cobbler or the gooey butter cake of the day.

    Oh, and wedding cake I guess.

    Cocktail hour:
    Beef hibachi skewers
    Wild mushroom risotto (served on wonton spoons)
    Crudite display
    International cheese and bread display

    Salad:
    Mixed green salad with choice of dressing

    Dinner:
    Grilled NY strip steak
    Chicken Cordon Bleu
    (Both served with garlic smashed potatoes and asparagus) 

    Pretty straight forward but DELICIOUS. We just had our tasting tonight and my mouth is still watering.

    Here was what our menu was:

    Cocktail hour:

    -Housemade Idaho potato chips topped with blue cheese and scallions

    -Miniature crab cakes with black bean and avocado salsa

    Choice of soup or salad:

    -Creamy tomato bisque with lump crab meat and fresh basil

    -Caesar salad

    Entree choices:

    -Shellfish over grits- sauteed shrimp, sea scallops, and lobster over creamy white grits and    a lobster butter sauce with spinach

    -Buttermilk fried chicken breast- served with cracked pepper biscuits, mashed potatoes, collard greens, cream style corn, and sausage herb gravy

    -Grilled twin filets of beef- served with smashed baby red potatoes, haricots verts, with Madeira and Bearnaise sauces

    -Macaroni and cheese served family style on the table to go with all entrees

    Dessert:

    -Cupcakes- Carrot cake, chocolate, vanilla, or red velvet

    Dinner is filet mignon, chicken piccatta, mushroom raviolis in a cream sauce, mashed potatoes and grilled asparagus - all served family style.  Apps are proscuitto wrapped melon; spinach, pine nut and goat cheese stuffed mushrooms; garlic sauteed shrimp on toast points; and fig & manchego cups.  Late night snack is pulled pork sliders, mini grilled cheese sandwiches, and chicken sate w/peanut dipping sauce.

    Apps:  Cheese, crackers and fruit display.  Plus:  Roquefort and walnut stuffed belgian endive, crab cakes with remoulade, proscuitto wrapped grilled asparagus, bacon wrapped shrimp.

    Salad: Harvest Salad.  Radicchio and romaine with dried cranberries, candied pecans, blue cheese and blush wine vinagrette

    Entrees:  Apple and sage stuffed pork chops, sliced flank steak with merlot sauce

    Sides:  Penne with marinara and parmesean, Italian roasted vegetables, scalloped potatoes with thyme and grueyere.

    Pretty pumped!!!  You're going to have quite an experience building your own menu!!!

    Are any of yall scared that you will have too much food during cocktail hour and no one will be hungry for dinner?  I was thinking of having chips and guacamole for cocktail hour lol and then having a late night snack

    Cocktail Hour: sashimi tuna cones, slow cooked duck on corncakes, crab sui mei, little philo purse things with asian pear, seared steak on brioch mini sandwich, brie en brioche with apples, antipasto display

    Caesar Salad

    Duo Entree: Short ribs and Butterfish with risotto milanese and roasted vegetables

    Vegetarian: artichoke mushroom streudel

    Dessert: Wedding Cake

    Stationary apps: Cheese table, Mediterranean mezze table

    Passed apps: bacon-wrapped scallops, edemame puree with thai chile oil in a cucumber cup, wild mushroom and gruyere phyllo triangles

    Salad: Green bean and cherry tomato salad

    Stations: Grilled tilapia with tomato lime cilantro beurre blanc, peppercorn-crusted beef tenderloin, and beggar's purse pasta filled with portobello mushrooms and parmesan in a carrot reduction sauce (sounds weird, but it was awesome).

    Dessert: Wedding cake and pie

    The one thing I am most excited about is out tater tot station during our cocktail hour. We have a baltimore themed wedding. Our favorite restaurant has this appitizer called Crabby Tots. Basically it is Tater Tots smother in Maryland Crab Dip (makes my mouth water just thiking about it). We decided that to incorporate this we are having a tater tot station. People can pit their own toppings and one of the choices will be crab dip. I am so excited to hear the guests reations to this one.

    Cocktail Hour:

    * Spinach/Artichoke dip with tricolor tortilla chips

    * Swedish Meatballs

    * Fruit and Cheese Plate

    * Flatbread Pizza Station

    * Thinking of adding one more

    Dinner:

    * Chicken w/ wine sauce

    * Beef Brisket

    these have a salad, starch and veggie sides which I cannot recall at the moment

    Ours is a lunch time wedding. 

    We're doing

    Hamburger bar with a variety of cheeses, bacon, fancy schmancy condiments and homemade buns

    Brats

    Black bean burgers

    Salad (mixed greens, granny smith apples, dried cherries, and chopped walnuts in a maple vinaigrette)

    Vegetable Tray with ranch dip

    Fruit Tray with strawberry yogurt dip

     

    Carrot Cake

    Artisan beers and glass bottled sodas

    If they can really make anything, what about doing a ethnic meal featuring a type of food you and FI really love or that holds special meaning for you (your heritage? the type of food served by the restaurant you went on your first date?). You could do a family style rustic Italian menu, upscale Mexican, etc. Why do the usual banquet chicken if you can really do something unique?

    I am considering incorporating some kind of Thai dish in ours because we went for Thai food on our first date. Go for foods that you love and want to share with your guests.

    Well we dont drink so there will be no cocktail hour snacks, etc. For our main course we have a selection of chicken marsala OR filet mignon with a creamy peppercorn sauce OR macadamia crusted grouper wtih an orange cream sauce. Of course wedding cake will be served for dessert! The grooms cake is choclate with peanut butter filling, the wedding cake is pecan with caramel filling for the bottom tier and french vanilla cake with raspberry filling for the top tiers. Everythign is going to be sooo delicious!   :)

    @HoneyBear:  Yes, and I think this does happen a lot.  We are trying to walk the fine line of not having too much food, but also having enough so people aren't starved.  We probably have too much, but that is kind of how we roll in general when we entertain.  We get to keep all the leftovers from our event (we are having a caterer on site in a house that we rented) so the food won't go to waste.  We can send doggie bags home the next day with everyone.  haha.

    While we are getting our pictures taken:

    - cheese and crackers

    - fruit and veggies

     

    Buffet lunch:

    - chicken tenders from our favorite place

    -a MASH POTATO bar  with all the fixings!

    - salad with dressings

    -vegatarian lasagna and reg lasagna

    -garlic bread

    -mac and cheese

    -mini cheeseburgers

    -mini weiners in a sauce

    - stuffed peppers

    - baked tomato and mozz

    -grilled cheeses ( for the kiddies)

    - spanish rice

    -thats all we have so far its not set in stone haha

     

    and then an array of desserts   cookies, brownies

    and then our cupcakes!

    Gosh, all this stuff sounds so yummy!

    I dont know how I am going to pick... So far I have...

     

    Passed apps-

    Fish and shrimp ceviche

    (gonna add one more)

    Stationary apps-

    Chips and salsa bar with assorted salsas/ guacamole and pico de gallo

     

     

    Salad

    Mixed greens with cilantro lime vinaigarette dressing

     

    Dinner

    Sea bass filet with buere blanc sauce (dont know what that it, but it sounds yummy lol)

    Steak filet with grilled shrimp in butter garlic sauce

    Vegetarian- Angel hair pasta with sun-dried olives and tomato-vodka sauce

     

    Dessert-

    3 leches cake (wedding cake)

     

    So what do you guys think? We are having a DW in Mexico, so I wanna have a local flair to the food, but I just feel like it seems kinda plain. :\

    I want to have a late night snack of some sort, but Im not sure what to do. Any suggestions?

    We're self catering a 'sweet & savoury tea' reception mid afternoon (2pm),

    'savoury': cucumber finger sandwiches, smoked salmon w. cream cheese finger sandwiches, 'BYO ' subs with deli meats, mini quiche bar (quiche lorraine, mushroom & mozza, garden veggie, spinach & feta), pinwheels, a cheese platter with 'nibbles' (crackers, flat breads, olives, pickles etc), crudites/veg trays, two types of homemade hummus (jalepeno & a sundried tomato) and salads (greek, asian coleslaw, 3bean summer salad).

    'sweet': Pie bar (strawberry rhubarb, cherry, blueberry, pumpkin, & mini fruit tarts), cookie bar (choc. chip, shortbread, peanut butter, sugar cookies, macedamia, cranberry & oatmeal), danties/bars (nanimo squares [new york slice], raspberry oatmeal bars, brownies, date squares, butter tart squares), cupcakes (cranberry-orange & white), fruit skewers & whipped fruit dip, mini single-serve ice creams as favors. 

    Drinks:

    coffee, tea (earl grey or orange pekoe), fruit punch, sweet tea and lemonade.

    I have to have 2... the daytime JOP wedding and BBQ lunch reception: ribs, chicken, hamburgers, hot dogs, all the sides, and wedding cake for dessert. 

    Nighttime Asian blessing ceremony will have a traditional wedding banquet: crab and asparagus soup, spring rolls, crispy salt toasted shrimp, roast duck, sauteed baby bok choy, and seafood fried rice... and another wedding cake. 

    I know, I'm going to have to wear a muumuu...

    We had a four course sit down meal.

    Our 4-Course Meal Selection was:
    Salad: Spring salad with goat cheese and almond oil dressing
      
    Soup: Clam chowder with chopped vegetables au white wine sauce OR Cream of asparagus au mint

    Main: 1. Beef Fillet with dijion mustard glaze varnished with provencal herbs
    2. Chicken breast casablanca stuffed with seafood and covered in almond sauce 3. Vegetarian option of tomoato basil linguini

    Garnish: Mash Potatoes au gratin and grilled vegetables

    Dessert: Cheese cake with chocolate as well as the wedding
    cake which was Bailey's & almonds with white fondent icing
