For any of you who are trying to shape up a bit before the big day, or just want to eat healthy, what are your favorite healthy/diet foods?
Right now I am munching on some Asian veggie soup. It's just raw veggies (bell pepper, sprouts, suash, carrots, onion, cilantro) with boiling chicken stock poured over it. Add a little lime slice to it and some Sriracha--it's yummy! And practically all veggies.
I also like low fat yogurt with two tbl spoons of grape nuts in it.
If anyone has recipes, please feel free to share! :)
one of my fav snacks are to have a wedge of laughing cow cheese (yum) with some veggies like peppers or celery, ssoo good!
Apples and carrots--both have lots of fiber and keep you full for a long time.
I <3 bell peppers just dipped in balsamic. I actually like steamed broccoli drizzled with balsamic too. Heh, I just like vinegar I guess.
Better n Peanutbutter!!! Peanut butter with TWO grams of fat mmmmmm. Plus, I love how the little peanut fella's got a measuring tape around his waist=)

Also a BIG fan of Edy's sugarfree fruit bars - I actually prefer then to regular popsicles!
I nom up salads...it might not seem good, but I make all kinds of different salad stuffs just from what FFIL brings home from the store and I love the caesar dressing FI made. It's heavier than the stuff you can buy, but I hardly need any at all so it ends up being better for me.
I love to bake sweet potato "fries." Yummers. Just slice, add a little olive oil, salt pepper, and cayenne. Bake at 400 for 35min.
I could eat squash for every meal, every day. I'm weird, I know.
I also cut up chicken breasts and cook them in fat free Italian dressing. SOOOOOOO GOOD!
Tofu! And Laughing Cow cheese on cucumber slices. And black beans with brown rice and cheese. And... okay, I'm kind of a health food nut. :P
I live off of recipes from Vegetarian Times and Weight Watchers.com. WeightWatchers cookbooks are really reliable and simple. Vegetarian Times recipes are generally a bit more work but always delicious. For $15 a year, I pull out at least 5-10 recipes from each magazine. (I'm not a vegetarian either--their food is that good.)
@Jennybirdy, I LOVE sweet potato fries, but I've never put cayenne pepper on them, I will have to try that out.
I don't believe I've ever had laughing cow.... ??
Laughing Cow is amazing! It comes in little wedges and they have a few different flavors - swiss, herb, and French onion, I think. It's real cheese, no nasty fillers, but only 35 calories per wedge and it tastes amazing. I like to have it with cucumbers because I found that I was eating way more empty calories in crackers otherwise!
Wasa Bread w/ Laughing Cow. Maybe with some thin pear slices on top. Mmm.
I'm a big fan of slicing up an apple and eating it with natural peanut butter. It's a great pre-workout snack when I'm trying to lose weight.
@ littlestbirds, I love sliced apples and peanut butter too! It's healthy, and fills you up
@RenoRose, oohh you must buy some laughing cow cheese, it is so yummy! It's usually in the more fancier(lol)cheese section.
Ok, you guys have convinced me! I'm going to put laughing cow on my shopping list. Swiss sounds good... I'm excited! I wonder if it will go good with green apples. I love apples and cheese lol.
@RenoRose...the french onion laughing cow and herbs and garlic are really yummy too! I think they add a little more taste to the cheese. I have it with crackers as a snack at work everyday. I also have air popped popcorn when I get hungry...its empty calories but if fills you up and you get most of your fiber for the day :) if you dont like it plain...add a little bit of olive oil to it...DELICIOUS.
I have been living off of Pineapple..
And I love a banana sliced up with a little bit of peanut butter...

Air popped popcorn, yes, and POP CHIPS!! Not exactly "healthy" but low fat (100c a bag) and nips that potato chip craving! Same goes for Fiber One Bars.. They're not healthy, but at 140 cals, they taste like a Snickers bar!
I also love these guys. They taste like someone made an egg roll into a burger, and they are only 100 calories. I normally put it on an arnold sandwich thin thing, then pile a ton of mixed greens on top, and put a little bit of Newman's Own Asian Ginger dressing on it. It's friggin' tasty.
I also love sliced persian cucumbers with pepper... nom nom!
Oh my god, I LOVE morning star!! I like their chicken patties (or nuggets) with Honey Dijon.
@Ms. Teddy, I will take your advice. I am a garlic FREAK. I put garlic on/in just about anything. Heck, I'd put it on pancakes if it didn't sound weird. Hmmm...::thinks about it::.... lol
EDIT: Does anyone have any healthy meals they'd like to share? I'm all about snack food, but I like the full on meals too.
My single favorite healthy meal is also super simple.
Black Beans & Rice a la Pink
2 Cans Seasoned Black Beans (I get the Cuban style at Trader Joes)
2 Cups Instant Brown Rice
1 Small Onion
1 Green Pepper
1 Red Pepper
1 bunch cilantro
2-3 Cloves Garlic
1 Can Rotel w/ Green Chiles
Spices (I use Cumin, Pepper & Salt)
Chop the onion and garlic, and sautee in 1 Tbl Canola Oil until soft. Then add the peppers, cook for like 4-5 minutes, then add Rotel & Black Beans. Add spices. I normally let this simmer as I cook the rice in the microwave. Then, add the rice and cilantro. Eat & Enjoy!
I normally make a pretty big batch of this, and then we freeze the leftovers in individual portions and bring them for lunch to work/school.
i love steamed edamame with a sprinkle of sea salt when i'm in the mood for something salty. air popped popcorn with 2 tablespoons of grated parmesean cheese also does the trick to cure the crunchy cravings and low fat, sugar free jello pudding with berries is great when you want something sweet!
@renorose i have lots of healthy recipes! i love to take comfort foods and find healthier ways to make them. message me if you want some recipes or ideas!
For a simple meal I like eating avocado sliced over brown rice with a squeeze of lime juice. Cold cereal can also be relatively healthy, especially if you throw some raspberries (high fiber!) and bananas on it.
I had a really great meal tonight - some chicken breast in whole wheat tortillas (I buy mine at Trader Joe's, 50 kcal each and a lot of fiber!) with roughly chopped tomatoes, a little avocado, and a side of lightly sauteed matchstick zucchini.
I love fruit!! lol
I have a really yummy pizza recipe! It's only 330 calories per slice(which isn't a lot compared to other pizzas!) if you want the recipe let me know! lol I"m kind of a big health freak!
Skinless chicken breast w/brown rice and broccoli. Oh, if I could only add a mushroom gravy to it, I'd be in heaven!
@Ilikepink, that sounds delicious! I went on a black bean kick a few months ago. I even made black bean brownies and took them to work and had people blind taste test them. Everyone was surprised when I told them they were made of pureed black beans.
I love anything Mexican or similar to Mexican food. It's my absolute favorite. I will definitely give that a shot. In fact, probably tomorrow because my SO works. My mouth is watering.
@Cinnamon Roll. My guilty food is cold cereal. I know it's not THAT BAD for you, but I'd like to eat more food that has substance and nutritional value. I literally eat 3 bowls a day. Small bowls of course, but still... It's my "easy" snack. I eat it for breakfast before work (at 3:30 am, no time to cook), after work before class, and after class before dinner. It's horrible. :(
Something I've been doing for dinners a lot when my SO works is simple chicken burritos. I just saute some onion and 1 small can of ortega chillies, some ground chicken (or turkey) and one can of black beans on a wheat tortilla. My bad habit is the cheese and sour cream. Although I do put fat free sour cream...still... I love cheese dang it!! :( lol! :)
Berries! I buy frozen bags at Trader Joe's and eat them like popcorn frozen and out of the bag! I super paranoid of cancer so I get my antioxidant fix too. I love V8 juice but the sodium takes some of the "health" out of it. Sweet potato fries are amazing bc FI likes them too so it keeps him from running to Jack in the Box and nothing beats a well seasoned chicken breast, but I'm bot into touching raw chicken...
@RenoRose Try anything from WeightWatchers, I used to follow it, but don't anymore. The tuna salad hot dog bun thingies are really good. I like to make summery food because it tends to be lighter (such as sliced tomatoes with mozzeralla and olive oil or spaghetti noodles tossed in olive oil and fresh herbs).
@hsearle, If you have a healthy version of 4 cheese baked mac and cheese I might just love you forever. lol Just kidding...kinda... :P
Be careful of the MorningStar/Smart brands! They're delicious but loaded with sodium. I still eat them, but definitely in moderation. I'm slowly getting braver and preparing my tofu more creatively from scratch.
1)Laughing Cow Cheese (MMMM! on low cal crackers or fruit)
2)Sliced Apples (sometimes with peanut butter)
3)A basic salad with chicken and low fat/lite dressings
4)Sugar free jello/pudding
5)100% juice popsicles
6)Lowest calorie version of cool whip with fruits
7)Yogurt

They are also one of my favorites.
JELLO makes this new mousse that is only 60 calories. So far I've tried caramel and chocolate. The chocolate is SOOO good! I recommend them!
I also love Skinny Cow ice cream cones. DELISH!
@RenoRose, I feel you on the cold-cereal addiction! I actually love plain corn flakes with (shh) a spoonful of sugar. White sugar! i don't even cook with white sugar, I cook with raw. It's just so dang good.
VitaTops are my addiction. They are like these little muffin tops that only have 100 calories, but have like 6g of fiber & 3g of Protein. I like them because they are super chocolatey, and I am kind of a fiend for chocolate. When I come home from school and want a snack while i am doing homework, I pop on in the microwave for 30 seconds and have a glass of skim milk with it.
They are kind of spendy, like $4 for 4 VitaTops at Target. But I figure compared to when I used to buy fatty snacks at school, or at Starbucks, they are actually pretty cheap.
