Ooooh....cheesecake!! Or, carrot cake with cream cheese frosting comes in as a close second for me (apparently, I'm all about the cream cheese!!!!). :)
My vote is no cheesecake. I HATE cheesecake.
In my mind, you can never go wrong with a vanilla cake (though I voted for chocolate).
I love cheesecake, but it's one of those things that some people hate and some people love, I think. Vanilla cake with chocolate frosting? Can't go too wrong there.
I agree, vanilla or white cake seem to be the best "universally accepted" cake. I know I'm a weirdo, but I don't like chocolate cake either! I like chocolate fudge, brownies, etc, but I don't like chocolate cake...Pretty sure Bruce on Matilda ruined it for me. ;)
You could do vanilla with chocolate icing, to cover both bases?
I like cheesecake too, so that's what I voted, but I know lots of people that don't.
@stillme: yes! Thank you. I understand so many people LOVE cheesecake, but honestly it's one of the most offensive cakes if you don't like it. To me, it's just disgusting, and it's so difficult to politely decline when being offered, because the reaction is always "You hate cheesecake? What's WRONG with you?"
Unless you know for a fact that this girl likes cheesecake, better safe (with a generic vanilla cake) than sorry.
My favorite cake is Black Forest, but if you want to avoid chocolate, I'd go with vanilla or lemon. I don't know anyone who doesn't like lemon-flavored desserts. Angel food cake is pretty awesome as well.
And I love carrot cake (mmm...cream cheese icing), but I want to cry when people put raisins in it.

I'm sorry, I just feel very passionately about not putting cheese in desserts. I will stop ranting now. 
@linguo42: *raises hand* I despise lemon-flavored desserts. I literally will flat-out decline.
Dessert is my weakness. I love all the cakes you mentioned, but cheesecake. The Olive Garden has a black-tie chocolate cheese cake that I adore.
@linguo42: My mom is one who despises lemon flavored desserts. She absolutely cannot stomach them. Yet they are some of my favorite desserts, haha.
@oracle: Typically when I'm baking a cake for someone and I'm not sure of their favorite flavor, I will do a white/vanilla cake with buttercream frosting. About as generic as you can get, but still tasty and almost EVERYONE will like it.
I absolutely LOVE LOVE LOVE yellow or white cake with chocolate buttercream frosting. YUM!!!
I also like tiramisu, red velvet, chocolate & cream cheese frosting, chocolate & chocolate, yellow cake with mini-M&M's baked in with any kind of frosting on top, salted chocolate caramel brownies... well you get the point. I pretty much like any baked type of goodie.
I was going to vote for chocolate and than I saw cheeeeesecake!! I love cheesecake! lol Now I need some! : )
Things I won't enjoy are cheesecake, anyone else's carrot cake (took me a decade to perfect my recipe), anything with creamcheese or orange rind. Since some people hate chocolate you might stay away from that. Safe bets are yellow or white cake or maybe cherry/cherry nut.

I think yellow cake with vanilla frosting is the safest bet.
I love cheesecake, but it is really hit or miss. Make sure they don't have allergies, too!
Perhaps your FI could bring a big piece of cheesecake for lunch to work and have "too much" and give the guy a piece to see his reaction? 
Thanks for all the input.... I want to make the cake from scratch and don't have a good simple vanilla/yellow cake recipe... hmm... maybe I'll make them two cakes (since there are two b'days!) haha...
German Chocolate is my absolute favorite, but my 2nd fave is carrot cake so I voted for that one! That said, I love all kinds of cake. I love cheesecake, too. Yum!

I'm baking a cake for one of DH's best friends and his wife (their b'days are two days apart).
He couldn't remember what kind they liked... and I'm struggling with trying to figure out what kind to make....
I work with someone who doesn't like chocolate, and we've been getting all sorts of chocolate in the office for the holidays and he always grimaces. I would hate that to happen this time!
Any universally LOVED cake ideas out there?
