    Extra sharp cheddar all the way, though I appreciate Gouda as well...I basically like all cheese, except blue (yuck, mold). I eat it plain or with crackers; I'm not picky. DH bought this really well-aged brick of cheddar the other day and it's fantastic--I love the way it explodes on your tongue with a sharp little "ping."

    I love cheese, it's by far my favorite thing to eat.

    For cheese and crackers, I love Cabot Seriously Sharp Hunter's Cheddar.  Pair that with some Olive Oil and Cracked Pepper Triscuts and it's practically a meal for me!

    Also, I love to make baked brie on special occasions, and I usually pair it with apricot preserves (the preserves can also be used with the cheddar to make a fancy grilled cheese).

    And, finally (haha), there is one dish from Carrabas with goat cheese that I love.  It's their Chicken Bryan and it is so delicious.  Tangy lemon sauce, with creamy but tangy goat cheese and basil...so good, and just wouldn't be the same without the cheese!

    The best cheese I've ever had in my life was from Shelburne Farms in Shelburne, VT. We took a tour of the farm and the dairy and at the end we got to do a chese tasting of cheese taken right out of the wax! We tried cheddar aged from 6-8 months to 3 years! The 18 mth was perfect. Not too sharp. Mmm mmm tasty!

    My other FAVORITE cheese is Black Diamond cheddar cheese! I can't find it in TX anywhere, so Cabot's extra sharp, is a good replacement for when I need a fix! :)

    Pepperjack is my all-time favorite. I also appreciate a good provolone. I used to work at a deli, and everyone came in raving about munster. I think it's probably my least favorite cheese because it just smells funny. I'm also not a fan of brie. We tried a German butter cheese, and it was pretty good. Not as good as pepperjack, though :).

    I don't like to eat cheese by itself - only in or on cooked foods (so not just with crakers or anything either).  My favorite is swiss cheese!

    Goat cheese. Hands down. Mmmmmmmmmmmmmmmmmmmmm. I make this amazing "brushetta" with goat cheese and a slow roasted port tomato. Omg to die for.

    LOL...Mozzerella and Mexican Chiuaua. I go all out fancy ;o)

    I'm actually not a huge fan of cheese at all in general. The above two are the ones I tolerate!

    @napabridekelsey: If you like that (and its really good) you have to try my favorite!  Brillant Savarin. Also a triple cream. Its nicknamed the French Crack... and for good reason!

    I'm not just saying this because I'm a die-hard Coug fan, but Cougar Gold is absolutely by far the best cheese I have ever tasted! I make a delicious potato-cheese soup with it... add a little white wine and it's pretty much orgasmic.

    I love cheese! My current favorites are Oka, brie and Honey Goat cheese. The gost cheese is amazing it's just like eating a cheesecake!

    Brie of any sort, but especially the St Andre Triple Cream...my BIL and I bonded over a wheel of it a few Thanksgivings ago..by that I mean that he and I ate the entire thing in one sitting...so amazingly delicious and creamy.

    Followed very closely by goat cheese.

    Blue cheeses, I like having them with pecan and pear salads with a saskatoon berry dressing. YUM!

    I also like saganaki which depending where you go for it can use different kinds of goat cheeses.

    For snacking, sharp or extra sharp cheddar. 

    For meals, pecorino romano, parmesan, or mozzarella.  I also like feta and goat cheese.

    The only cheeses I am really not a fan of are blue cheeses.

    @napabridekelsey:@missmouse29: Also, try grilled cheese with goat cheese, caramelized onions, sauteed portobellos (chopped), and fresh basil on whole grain bread. To die for.

    For the bruschetta it goes something like this: Mix together 3 tablespoons of port wine, 1tbsp balsamic vinegar, 1 tsp dried oregano,  1 tsp dried basil, 2 minced shallots, and some salt and pepper. It shoud be pretty chunky. Cut some roma tomatoes in half lengthways, and coat with oil and minced garlic. Place them cut side up on a baking tray covered in tin foil (believe me about the tin foil!!!). Put some of your port/spice/shallot mixture on top of each tomato and bake for about 30-35 minutes at 450*.  Slice up a baguette and toast those. Smother in goat cheese and place a roasted tomato on each. Make more than you think you'll eat because they're AMAZING.

    That recipe is from Cooking With Booze which I highly recommend, incredible cookbook!

    There's this wonderful white cheddar with garlic and jalepenos that I'm in love with as well.
