I love to crochet. It's extremely relaxing and I love all the warm snuggly blankets I end up making! 
I love creating things with paper. Like cards. I love going to specialty paper stores, and seeing what I can make out of a piece of paper. I usually make handmade cards for my family members for birthdays and such. People love them, even though I'm not super great at it or anything. If I had more free time, I would love to take classes or something.
I would also really like to take a floral arranging class since I love flowers.
I LOVE knitting but now that i am planning the wedding i dont have much free time to knit. Also reading fun girly books!
I love reading. It sounds odd on its own, but I like to write book reviews and join book clubs and do tons of reading challenges. Nerdy I know, but very time consuming, it definitely took my mind of waiting.
Any free chance I get I surf. i.e. I went at 5am this morning before the sun even peeked out and I was there for the tide yesterday afternoon ;-)
Other than that, I'm forcing myself to pick up my guitar again... Perhaps try and instrument or join a gym. I could say a borderline "hobby" of mine is exercise ;-)

@KLP I wish I could make myself pick up guitar again, but I am just not that motivated. Very jealous that you get to go surfing whenever you have the opportunity!
martial arts, cycling, running, gardening, reading, cooking, taking classes (part-time masters on the way), etc...
We have a TV but no cable so we only watch movies; that leaves plenty of time for many hobbies!
Photography! I've been spending quality time with my Nikon D3000 lately...
I've just gotten into scrapbooking. I've never done anything like this! I would also love ideas on putting together a "good" book. I am using some of our wedding things (our program, a few napkins, and an invite) are already in there, but I've only put some fancy paper behind each thing. I guess I need pictures to put in there too!!! But I just got started, so I'm still a little slow at pulling it out. I don't want to mess it up!
Photography for me! Life has been pretty busy lately, but I keep on taking more pictures and now I have a huge backlog of images that I need to process!
Yoga! Yoga cures everything! And I run, and hike.
And cook. I'm constantly reading cooking magazines, trying out recipes from new cookbooks, and experimenting in the kitchen.
Which is why I have to run, or I'd be HUGE. 
I agree with Ms. Moxie Monkey. Yoga... all kinds of it. I am a huge fan of Bikram Yoga and practice it at least 3 times a week.
my hobby lately is makeup. i have been buying a lot of really nice makeup and it is kinda a collection i am starting...like coins, stamps, cars, but i can actually use mine daily :)
I like to cook. Especially out-of-the-norm stuff (whenever we have a pot luck lunch at work, people always ask what I'm bringing because it's something different, such as dolmas or chipotle brownies).
I also am involved with my dogs. I have 3 of my own, one of which I show in conformation. I'm at dog class at least once a week. I'm also a member of a local AKC dog club.
I used to dance (did it for 17 years), but quit during college because it was just too much to do school, work, and dance. I'd like to get back into it!
@plantains: Same here! My main hobby is reading. I read obsessively, participate in reading challenges and an online book club.
I keep a blog to keep my family and friends back home updated on my life abroad. I like to cook (although I definitely cooked more with the BF before we became long-distance... it feels a bit pointless to cook for one
). I play a few instruments and have recently started going to a taiko drumming class. I also do yoga (sparingly now, but I'd really like to get back into the habit of doing it on a regular basis), play Wii and DS.
Used to do loom knitting. Super easy and keeps your hands busy!
I have so many hobbies! I love hiking, and painting, and reading, and drawing. Making jewelry. Knitting is great too. Anything artistic or crafty is good at consuming your mind.

I also love to try out new low-carb/sugar-free recipes...so cooking is one too!
When I was waiting I got into kickboxing. It's a great full body workout and I still do it which keeping me fit while I plan the wedding.
any type of art. currently cross stitching though. i'm taking on a blanket... it's taking forever but it keeps me busy.
Right now its running and going to running events on the weekends.
My dog is a hobby since he hates to be alone, haha :p
I used to have a few more hobbies but I've dropped them lately: crafting, reading, cross stitching, etc.
My weirdest old hobby? Professional table setting (like the kind you see at country fairs)
. I would like to get back into it but it can be so expensive (one table = $400 once).
@jjilyeah: I try to stay active. I rock climb often and take yoga, aerobics, and dance classes when I can. If Groupon (www.groupon.com) is offered in your area, it might be a great way to try out new activities until you find something you really enjoy.
Running, different crafty/decorating things (I'm helping a friend with her new apartment right now), biking when it's cooler weather. And I'm always trying new recipes.
I LOVE to scrapbook! I have a lot to catch up with...I was so busy with the wedding! I think I left off at Easter ;) I have all the bridal stuff left to do and of course about 10 wedding pages!
I also enjoy cooking/baking (I like to write down the recipes for my recipe box as well), work out, watch the food network/ reality tv/ hgtv/ college football/college basketball, and going out to eat :) I am also trying to get into keeping a journal...I bought the blank book and my goal is to start by our 1 month anniversary :)
Writing and gardening/landscaping are healthy, time-consuming, and distracting hobbies. :)
@Minutiae gardening/outdoor work is one of the reasons I am so ready to have a house and not a little apartment :) that and decorating longterm!
@Sulli301: Agreed! But I won't get anything done when I have a house to decorate, haha.
Cooking. I love creating new and exciting foods, and I love the challenge that my FI brings to the table with all his allergies because it gets me to think outside the box and create something he has never had before.
Art. You name it, I have done it. I like painting and photography the best. I really like doing landscape painting and photos. My avatar in fact is a picture that I took!
Reading. I love to read. Whether it be a book or articles on the internet. I am willing to pick up any book and try to read it.
Videogames. Yes, I know. As time wasting as WB is but I love them. I play Metal Slug and Castle Crashers with FI and Pokemon in my spare time. Pokemon is stupidly addictive. Seriously.
