We just picked ours this weekend :)
Prelude: Bless the Broken Road... Rascal Flats (cantor will sing with piano)
Processional:
Gospel Acclamation: Celtic Alleluia.... Walker
Lighting of Unity Candle: Bridal Prayer.... Copeland
Preparation of the Gifts: Come and Journey with Me.... Haas
Mass Setting: Mass of Creation... Haugen
Communion: Table Son..... Haas
Recessional: Trumpet Voluntary.... Purcell
All I know for sure right now is that I want the Gloria by David Haas but I'm not sure if that's going to happen.
@KLP2010: When I was listening to your Sanctus, I pictured a bride walking up the aisle to something like that and got goosebumps.
We are both of Irish descent, and both love Irish music. Our songs are songs that are commonly sung at the church we both attend and are to the tune of celtic songs (three of them are actually Scottish I think). We wanted up-beat, happy sounding music for the Mass.
Processional (maybe just instrumental, it's the tune of Star of the County Down, and we are having a fiddler play it): Canticle of the Turning: http://www.youtube.com/watch?v=TXyGh1MW2OM
Responsorial Psalm or the Mary thing: Holy is Your Name (the tune is Go Lassie Go, and it's based on the Magnificat) http://www.youtube.com/watch?v=2T6lPy3cWQY
Communion: When This Day is Done (Liam Lawton)

Recessional: Onward to the Kingdom, David Haas (the tune is Marie's Wedding)

We have the mass parts picked out as well, but I am not sure which we decided to use.
@KLP2010: Are you going to have the organ playing the songs, or are you using the recordings?
Also, somewhat related: what resources are people using to find/hear/compare music for their wedding? I'm just starting on this, and would love to gain some insight if anyone has any. Thanks.
All I know is I really want Jesu, Joy of man's desiring for the processional, and The Servant's Song for communion. And probably City of God for the recessional.
My wedding song list updated! I finally found a pianist/organist, and here's the "rough draft" song list we've come up with. (I like the traditional stuff, but threw in a few of my own personal picks, including one song in Spanish as a nod to my FI's family who come from Mexico.)
Prelude: Canon in D - Pachelbel, Jesu Joy of Man's Desiring - JS Bach
Processional: Largo (Xerxes) - Handel, Bridal Chorus - Wagner
Responsorial: Blest are Those who Love you
Mass setting (Alluluia, Holy, etc): Mass of Light but I would have preferred Mass of a Joyful Heart
Gathering of gifts: Prayer of St. Francis ("Make me a channel of your peace") or maybe We Have been Told
Communion: Pescador de Hombres, You are Mine (not as sleepy as this version though)
Closing: Wedding March - Mendelssohn
Postlude: Ode to Joy - Bethoven
P.S. Sorry for the funny link at the end.

Prelude: 1. There is love (the wedding song)
Processional: 1. Parents & Wedding Party: Canon in D
2: Bride: Bridal Chorus
Responsorial Psalm: Taste and See
Unity Candle/ Presentation of the Gifts: Amazing Grace
Communion: How Beautiful
Meditation/Kneeling before Mary: Ave Maria
Recessional: Joyful Joyful we Adore You
