They can be done the day before. However, make sure that they are hung nicely if they need to travel. :)
@waffle:Thank GOD! I can only imagine the day of the wedding trying to figure out how to do hair and makeup and designate family to steam all of the dresses while getting ready themselves!
I'm not even sure when mine was steamed, but I picked it up on the Friday afternoon before our Saturday wedding. I took it directly to the church afterwards and hung it up and let the train out...still looked great when I put it on Saturday afternoon. I think as long as you hang it up right away and don't move it, you will be fine.
At my cousin's wedding this summer, we were trying to steam her dress plus all the BM dresses the day of the wedding and it was a DISASTER!! The steamer left these big wet spots all over the dresses that you could see in some pics, plus we ran extremely late. So avoid doing it the day of to avoid any potential craziness!

I'm having a DW. My gown will be steamed and pressed and I was told that I should resteam it before the wedding since I will be picking it up Tuesday and my wedding is on Friday. Do you have to steam the BM and wedding dresses the day OF the wedding or can they be done the night beforehand?
