Why not just bake a sheet cake (using like half the batter) and then use cookie cutters to make th layers?

@xokaleneox: You can go here & look at peoples mini cakes made from that pan! :-)
omg, these are so adorable! It would be so neat to have a miny version of your wedding cake at each table.
You could also do a cookie version like this, a lot easier. It is really hard to ice mini cakes smoothly.

Williams Sonoma has a pan for really fancy mini cakes.
I don't know why the first picture is sideways, but you get the idea lol
thanks for the tips! I do like the William Sonoma ones- I just found them on amazon too- I don't know if I could do that icing job though lol
