Any jeweler should be able to give you an appraisal value for your ring (and polish and engrave the other ring). My ring is custom made and the jeweler gave my FI the appraisal paperwork with the ring when he bought it. (He also stressed that it was important to put the ring on my insurance ASAP!) I called my homeowner's insurance (it has to be mine because I don't live with my FI, so the ring technically "lives" with me... you could ask your agent what they suggest in your state.) and then just faxed them the appraisal paperwork. I would recommend going to a non-mall store jeweler, they probably have the tools to do the work on spot as opposed to having to send the ring out.
