As if I didn't have enough to do, I'm currently working on the menu for the rehearsal dinner.  They have two chicken dishes which both sound great and I need help deciding between the two.  Just wondering which sounds better to you!??

#1 - Tuscan Chicken Breast, served with olives, artichoke hearts, herbs, roasted garlic, grilled parmesan polenta

#2 - Roasted Buttermilk Brined Chicken, served with whipped Yukon potato, seasonal vegetable

Yummy!!!!  I would say # 2 sounds better to me, but only because I hate olives, which are in #1.  Aside from the olives, they both sound great!

They both sound delicious to me... I suppose that's why you need our input! :)  I voted for Buttermilk b/c I like what it's served with better.  But honestly, either option would be a good choice in my book.  Good luck!

    I love #1 sounds delish.

However, are your other options basic? For instance, lots of people don't like polenta, and artichockes and olives may be a bust. However the buttermilk chicken with mashed potato and veggies is a super basic choice that most everyone will eat.  So just make sure you have a basic choice is all that I'm saying.

Tuscan chicken sounds more fancy and formal. Buttermilk chicken sounds more homey, comfort food-ish. What are you going for at your rehearsal dinner? They both sound delicious too.

@mwitter80:The non-chicken option is fish: Grilled Salmon, served over a bed of corn, lima bean and new potato succotash.

Then go with the buttermilk. The Salmon is your "out of comfort zone" option.

@carrieknitscake: The dinner is going to be pretty formal.  I mean dresses for the ladies and slacks and ties for the men.  It's at the same location at the wedding as we have rented out the space for the entire weekend.  Although it will be in a separate room from the wedding reception.  The catering place is pretty formal, so I'm sure both would turn out very nicely presented.

@vabride2011: sounds good. The buttermilk one is definitely an all around crowd pleaser. When my husband and I were deciding on chicken dishes for our reception buffet, he wanted something different from the typical preparations. It went over pretty well too. The buttermilk chicken has me thinking of delicious fried chicken. I blame my husband and his Southern upbringing for my continued love of it!

I said #2 basically because I hate olives and artichokes.  But that's just  a personal preference.

I love the sound of number #1 but I voted for #2. Number one would be delicious but it has many things I've noticed to be common things people don't like (artichokes, olives, etc). I think #2 would be more universal.

#2 - I think it will appeal to most people.  #1 has ingredients such as olives and artichokes that not everyone will like. I think #2 is safest.

I would go with the buttermilk chicken since alot of people hate olives and artichokes with a passion.
