I don't think all white bouquets are "boring" I just don't think they photograph well next to dresses.
Gorgeous dress. My colours were green/gray/white and I carried a bouquet of baby's breath. I thought it looked nice. You could always add some greenery around the bottom so the flowers don't blend in too much.

@LGenz: Thanks. I changed the poll to and/or. Maybe extra greenery backing it would give it enough of a outline that they don't looking like they blend into the dress in photos?
I think either way works. I've seen amazing white/ivory bouquets, and equally amazing colorful ones. It's just a matter of preference really.
It's totally up to you - if you like the idea of a colored bouquet, it would really pop against all the neutral tones. If you like the idea of an all-white bouquet, it will look lovely and elegant. Really, you can't go wrong. :)
@Melini: Thanks! I was a bit hesitant for the same reason as you and I was happy with how it turned out.
I don't think all white bridal bouquets are bland at all. It's a great opportunity to use different textures and make them really stand out. I love the look of a bride with an all white or ivory bouquet when her BM's have colorful bouquets.
I think all white could be beautiful, just make sure it has texture! rock it! I don't think adding color would be bad either, you are the bride and it would be a nice pop of color against the bridal party.
I don't know if you have thought about it, but putting small diamond accents, or silver and black wire accents between the calla lilies would add a little something extra to it. Your florist should know something about how to add wire and diamond accents. I am a florist and we add accents all the time.
I plan on having an all white cascading bouquet with some greenery and filler plants. I love the look. But my BM's will probably have all white with some white feathers, and diamond accents, as the florist above suggested.

My wedding "colors" are charcoal and silver (and pure white and black). My BFFs are carrying simple 3 stem cala lily arrangements and the guys have single cala bouttonieres.
I'm not sure how I feel about adding a bit of color in my flowers if it doesn't appear anywhere else in the ceremony/decor.
This is my dress on the left:
