You can freez the cake part UNFILLED for up to a month seperated with wax paper and wrapped with plastic then foil or in an airtight container.
i've frozen them filled just fine for a couple of weeks. why not try a batch and test it out?
Yes, they freeze very well. That's what we're doing. Baking the cookies at my parents than freezing and flying them down here to be filled for the wedding. I would definitly seal each in cling wrap or something as they do dry out.
