Will flowers sit ok in this centerpiece?

I think they would be fine in the original stuck in florist foam to hold their shape. Your florist will be able to help you.

I agree, have the florist stick the stems in floral foam so that they can be cut shorter and place them in the bowls (either size should work)

love the crafty-ness, the hydrangea & BB will look great!

I don’t think a professional florist needs you to tell them how to arrange flowers. They will either use florist foam, a grid of florist tape, or both, and the arrangements will be  lovely.

I think the deeper bowl is prettier (not that the first is bad or anything).
