We have a crazy family and just wrote "together with their families my name and his name invite you to join them in celbration of their wedding..."
I've seen it done where they list all the family (like your first example), but I think saying "with their families" covers all bases. My FSIL did that in a similar situation on her groom's side and no one was offended.
We are using "Together with their parents" because I think writing all the names out can look a little cluttered.

How do I add my father in that mix of shenanigans?

That so much stuff! Can I just put "together w/ their parents" and leave the names out of it? Obviously, my mom has a different last name than me and my father. ARG.
This is quite rediccculous.
