    Hi Everyone -

I'm going through my budget trying to cut "extras" wherever I can as things are starting to go a little overboard.  :)  Wanted to get opinions on the main entree at our buffet - which would be at a carving station.  Included in our package is a choice of turkey and ham OR peppercorn beef.  I really wanted to have a beef entree, but I cannot eat peppercorns (trust me), so I was going to upgrade to an herb tenderloin which would cost an extra $250.

Would anyone be surprised or offended or think we were "cheap" if we went with the turkey and ham carving station?  I'm assuming it will be like a Thanksgiving turkey and a Honeybaked ham style set up.  If I did this I'd make sure the passed apps during cocktail hour were beef.  (Also included in our package).

I realize I'm probably thinking about this way too soon, but I spend a LOT of time with my wedding budget spreadsheet and deleting the extra for the beef upgrade would really make me happy!  Or - do I go with the peppercorn beef but not eat any myself?

Maybe it's just me personally since I don't eat much red meat, but I would totally prefer the turkey and ham!

I say turkey and ham as well, it gives the guest options...you can eat it...and it doesn't cost an extra $250!!

I would be happy with any of those options.  And at least the turkey and ham gives people a choice (i.e. not everyone likes red meat, not everyone likes pork, and not everyone likes turkey, but most people will like at least one of turkey or ham).

Turkey and ham...it saves you money and it's like a 2 for 1 since you get two different meats!

I prefer beef, but Id eat the turkey as well, not the ham.  Is it possible you can do the tenderloin without peppercorns so if you really want it, you would be able to eat it too? But the turkey/ham does give your guests an option

Turkey and ham!  Tenderloin is just another one of those "extras" that you can easily cut from the budget.

People like turkey and ham! it's not cheap! no worries. It's just not as fancy as beef. And not everyone likes their beef the same way, so I find it the most difficult to serve at a uniform termperature.

I would prefer turkey or ham. That sounds yummy! Those are my favorite. If I was your guest (but I am weird) I would pass up the tenderloin and wish you had turkey or ham.

Your wedding is going to be great!

go for the Turkey and Ham.  A LOT of people don't eat red meat so this gives them two options to chose from.  I wouldn't even think for a second that it was cheap.

Turkey and ham! Especially since (1) you'll have your beef covered in the appetizer and (2) it won't cost more!

The guests won't know that you had other choices...so I'd say go with the turkey and ham (I'm also a bit biased because I don't eat red meat...hmm)! Especially if you have the beef covered in appetizers, I don't think that anyone would notice or be concerned about it, and it would give you piece of mind to be saving money!

Personally I would love the herb tenderloin, but if I didn't know that could have been a choice, turkey and ham would be awesome! I also suggest you cut the unncessary cost!

I think any of them osund yummy.  Sounds like you'd be happy to save a buck, so maybe cross off the tenderloin.  As for the beef, I'm with naangel55.  Is there a way to have it without the peppercorns?  It sounds like if so, that's what you'd prefer.

But the nice thing about the turkey and ham is that your guests will get two options.  In case someone has an issue with pork, they can haveturkey.  Whereas with the beef (however it's prepared) if someone just does't like it, there isn't another meat option for them.

Yeah I voted turkey and ham because, although personally I would prefer red meat, I think it's best to give your guests options because I know a lot of people aren't as much of a serious carnivore as I am :)

Turkey & Ham... mmmmm!! I also find that most people only tend to eat/cook turkey and ham on special occasions, so its like a happy treat to get to eat it more than twice a year. Go for it, I think people will love it.

MissCamera has a good point there.  And EVERY wedding has beef - including mine.  My other entree options are pasta and fish though so I can't wait to see what people choose.  You would definitely be unique with turkey and ham and in a good way of course!

I really need to be in the mood to have beef...but I ALWAYS love pork, which is why it's the meat option we're having for our plated dinner.

    Turkey and ham sounds delish!

@shortcherriez - we will have a vegetarian pasta entree - it may not be the ideal vegetarian meal, but to my knowledge there are no vegetarians (though there could be one I am not aware of, or someones date) so we want to make sure there is something they can eat.  I am actually more concerned about a gluten free friend of mine and making sure she'll be able to eat!

In addition to the carving station, our buffet will have a cheese/bread/veggie display, a vegetarian pasta dish, a chicken dish, a huge salad, and a side of potatoes.  We'll also have two passed apps (of which I am thinking beef skewers and spring rolls), and then we'll have cake, plus a table covered in chocolate goodies which will replace the grooms cake.  And there will also be a large fruit display as well.  So I'm thinking we have enough food to make everyone happy, at least I hope so!

have you asked if they could do a different rub on the beef? I'm sure they wouldn't mind making it with garlic and herbs instead of peppercorns..

I love beef as much as the next person but I would be totally fine with turkey and ham. There is nothing cheap about either of those and they are considered festive during the holidays and aren't considered cheap then so why would they be any other time of year? As long as the food is good and there's plenty of it, your guests should graciously accept whatever you offer. If they get upset because you aren't having something in particular that they prefer, then they are attending for the wrong reasons.
