Of course, 8 is ideal at 60″ tables….. but here we are a few days before the wedding and a bunch of people are too sick to come, so I am having to rearrange the seating plan. With 8 people at the rest of the tables, I have 4 people left. So, 7 per table or 9? I’m a little worried that with just 7 people, conversation won’t be very good because there will be a lot of space between chairs. What do you guys think?????
FWIW the chairs are the standard (cheap) folding white metal/fiberglass ones. Not the very skinny chiavari ones nor the wider wooden “garden” chairs.

Either one (7 or 9) on a 60 inch is fine. I’d be tempted to lose a table and put 9 on the rest if it meant I’d save on centerpieces, tablecloth, etc, but I don’t know how you’re set up for those things. 9 is not uncomfortable, even with the folding chairs you have (that’s what we had). And 7 doesn’t really create such huge gaps–we had 7 at our head table and were fine for conversation.

It’s just a few days before your wedding, so probably by now, you have quite a few other things in place. I would go with either 7 or 9 people/table depending on how many linens you’ve ordered, centerpieces you’ve accounted for, layout of the room.
I really don’t think the conversations will take a hit as a result of there being only 2 fewer people at a table. It probably depends more on how comfortable the people sitting at the table is rather than the quantity.
