It sounds like elements might be enough for you. For me, it was really helpful to do the 30 day trial to figure out what I wanted. No matter what you decide, I would start with the trial and do a smaller project or two to see if it works for you.

I would buy elements. The professional version is complicated and very hard for someone who has no experience in it to use. Elements is much more user friendly!

Also, PS Elements costs $100ish dollars, photoshop professional costs $700 I believe.
