Depending on your venue, sometimes there is a venue coordinator who will keep things moving along.  You may also have a catering manager who can take charge, or a responsible Maid/Matron of Honor, bridesmaid, aunt or mother.  The DJ is also helpful is making announcements, as mentioned above.  If you have the funding, a lot of people hire a Day Of Coordinator to take care of all these things.  You can usually find someone to do this for less than $500 if you don’t go too fancy.
