Perhaps to save money you could use silk stephanotus?  They are readily available and stephanotus is such an usually perfect flower even real ones look too perfect to be real!

Also- if you go with silk stephanotus, perhaps you could die them red for the Bridesmaid or Best Man bouquets so they would be a perfect inverse of your bouquet?

As for the roses- I say go with the real thing.  They are pretty reasonable.  I got mine from Bloomsbythebox.com and was really happy with them.  They have the Black Magic roses for $1.49 as stem (cheaper if you buy 150 or more stems).

As for how big things should be- the only way to really know (if you can’t just count blooms in a photo or display) is to try it out yourself.  This is especially important if you want to DIY them- you’ve got to practice.
