I’ve been bugging Darling Husband to tell me what kind of cake he wants for his bday this week. He always says “I don’t care” which drives me crazy. Tonight he finally told me that he wants a canoli cake (like our WEDDING cake) in the shape of the Super Mario 1up mushroom. How in the hell am I supposed to do that?! I was thinking like funfetti or maybe spicing it up and trying a Reece’s peanut butter cup. Not a friggin canoli cake on the shape of a video game character! I’m gonna give it a solid try but I’m not makin’ any promises.
Does anyone know anything about canoli filling (or annoying husbands? Kidding… kinda.)? I have a lot of googleing to do.

When you are making cannoli filling, use whole milk ricotta and drain in cheesecloth overnight or longer. I usually add mascarpone, confectioners sugar, chopped bittersweet chocolate, and a little amaretto or almond extract. Vanilla extract would work as well. Good luck!!!

I’d buy some canolis from the baker and print out a mushroom pic to tack on top haha! I have trained Darling Husband to have low expectations.

you can bake cake in a pyrex bowl to make a half round shape. may need extra batter depending on the soze of your bowls.

@TurtleDoves: He seemed pretty serious. I figure I’ll give it a try and if I fail miserably, I’ll know never to make canoli cake again. I don’t really have a budget but there’s not enough time to order a cake anyway. His birthday is Wednesday. I’ll just buy the ingredients (which I foresee costing a small fortune) and give it a solid effort.

@KatyElle: I definitely thought about doing that. I was telling my co-worker about it and she said that if I’m able to pull it off, I’ll get the best wife ever award so that’s worth an attempt. He just better realize he’s still eating it regardless of how it looks or tastes.
@kerensa: Good call! I never thought about that before. I was planning on just stacking a bunch of layers together and cutting it into the shape I need. The pyrex would be much easier.

@UpstateCait: Have you tried looking for a mario mushroom-shaped cake pan at a party store? Years ago I bought one in the shape of Garfield. Or you could consider cupcakes decorated to look like the mushrooms. Although I have no idea what a cannoli cake is like inside, so maybe that wouldn’t work.

@KatyElle: I’m with you. I’d just get a bunch of cannolis, stand them up like an asparagus cake, tie them together, and probably ignore the mushroom part. Lol. Whatever you do, take a picture and post it!

I bought all of the ingredients yesterday and this cake has already cost a damn fortune. I’m probably already $40-$50 into it and I still need to get another box of cake mix. My birthdays in 2 weeks so he BEST be planning some awesome surprise for me. His gift (concert tickets to see one of his favorite bands perform in Montreal) topped with this cake better guarantee me a happy birthday! lol

I have no advice because I am terrible at baking things that look pretty. But can you send me a piece? Because that sounds seriously delicious!! Your Darling Husband is lucky!
