It depends on your venue/bartenders.  Our venue lets us bring in and serve our own alcohol, so we’re serving a signature cocktail for cocktail hour, champagne for the toast, and beer and wine for the rest of the night.

I’d imagine you can select a signature drink for your bartenders to serve- this would probably help to cut back on costs if you opt for this instead of a full bar.  If your venue has its own bar, you’re probably paying per person for your open bar, as opposed to per bottle of liquor. 

Some couples opt to have one or two “signature drinks” to serve during their receptions and I’m sure you could work with your venue/caterer/bartender on this.  They’d need to plan ahead to be sure that they’re well-stocked enough to serve particular beverages.  Hope this helps!
