What about pitchers of sangria?  You can use fruit juices and fruit with the wine.  A pitcher of a white sangria and a pitcher of red sangria per table.  And then don’t offer a cocktail.

I think it’s too low also. One bottle for 5 people? Not enough. Also the 1 drink pp kind of sucks. I’d up the amount for sure.

I think minimal alcohol is fine, but I would do 2 bottles per table.  Otherwise you’ll have the situation where a bottle is opened, drinks will be poured for 3-4 people, and this will empty the bottle.  Then the other person / 2 people will ask for another bottle, won’t get one, and so will have to buy their own drinks.  I don’t mind not drinking at weddings, but I would be annoyed if I didn’t get a (second) glass of wine and the other people at my table did simply because they poured theirs first.

I think one drink is too little, I’d have at least 3 or 4 or I’d just do a dry wedding and put that money into some nice mocktails.

Not a fan of alcohol so 1 is enough for me. But maybe up the bottle per table since there will always be somebody that will drink so much more.
