They look like a partially opened peony or partially opened cabbage rose- it’s hard to tell IMO

Definitely cabbage roses. The white-grey/green stuff is dusty miller. I see some scabiosa pods and lots of traditional roses in there, as well.

Love cabbage roses. Sometimes garden roses can look similar, as well, and are more readily available.

they look like David Austin Juliette roses.

Yes, the roses in question are from David Austin’s line of “English Roses”.  They’re modern hybrids that LOOK like the old cabbage roses.  Many are fragrant, and of course, don’t shatter like an antique cabbage rose would.  Check out David Austin’s website for photos of his English Roses.  The cut flowers are available in the U.S.; check with your florist.
