I have a perfectly ripe avocado just begging to be used in a side dish tonight. Anyone have any suggestions or ideas? I don’t want to default to guacamole like I tend to do!

this obviously isn’t a side, but I love avacado on BLTs and in wraps (basically anywhere you’d put mayo)
Panini with chicken or turkey, avocado, pesto, spinach, fontina! Or grilled chicken breast with avocado mango salsa.
Yes! Motherthyme.com has a recipe for “avocado deviled eggs” that I’ve been dying to try.
I add avacado to so many dishes as a garnish.
Almost every morning, I have a fried egg on toast with avacado slices and salsa. So good.
They are also amazing in spinach salad, on top of pesto pasta, or just sliced on a piece of toast with tomato and pepper!
Maybe something like an avocado/cucumber/cherry tomato salad? I think you just put some viniagrette and feta on it?
This isn’t a side but one of my favorite things to do with avocado is mix it with tuna, feta cheese and mustard for a fancy and mayo free tuna sandwich. sooo good.
@Meowkers: wow thats an awesome lunch idea! I’ve tried tuna salad without mayo and its just never the same without that creaminess
pretty much all of these ideas have me wishing I bought like 9 avocados instead of 1. I wish they didn’t brown so fast or I’d eat them with pretty much every meal.

As a treat, I’ll sometimes have mine with a bit of sweetened condensed milk spooned into it. Sounds weird but I swear it’s so good!
