Stuffed chicken breast with goat cheese, spinach and dried tomatoes?

Or make a big crockpot that will last you for the week..

@Woodstock:  ik I bet.. When Fiance travels for work, I usually use my crockpot. So easy πŸ˜‰

I used to just make enough to last a couple of nights because I hate cooking :p

Off the top of my head some things I make for me are: sweet and sour chicken with steamed rice/ stir fries with noodles or rice/ chicken wraps (cook chicken breast then make wraps with cheese,tomato, lettuce and mayo)/ burgers/ salads/ mini toast pizzas (toasted bread with tomato, salami, black olives and cheese melted)/ mash potato and some sort of meat/ baked potato with spinach, tomato, bacon and sour cream/ pasta! The ultimate single persons food! 

Yum now I’m hungry!

I love all these ideas and now I feel terrible that that when I’m dining solo at home on a budget, I like to eat the junkiest, weirdest meals I can find. I swear, I eat like a stereotypical pregnant lady and I’m not pregnant. I would totally eat like two bites of chocolates and then a pickle and then a bag of ramen followed by a like a laughing cow cheese. HAHA.
