Hi guys! I was wondering if anyone out there tries to eat a low carb diet? I don’t follow any specific plan, but try to limit my intake to a net of 50 grams per day.
I used to just watch my calorie intake, but I ended up plateuing. So to jump start my weight loss again I went LC, and just never looked back! I feel better, and eat more vegetables than I did previously. I actually pull a little bit from the Paleo way of eating, but I just can’t give up cheese or coffee. 🙂
I stopped watching my carb intake for about 2 months and gained 10 pounds. With my wedding 5 months away, I decided to start back this week! Wanted to see if anyone had any favorite recipes or foods they wanted to share?

Since greens are your friend for nutrition and bulk in low carb diets, I LOVE a few over eay eggs over a huge pile of sauteed kale in a bit of coconut oil. Its reallydecadent tasting with the coconut flavor and soft yolks cover the greens like a dressing.
Also, try simmering asparagus in broth then pureeing it for a creamy-textured soup. Top with some chicken and avocado for a full meal.
Use halfed bell peppers like little pizza crusts and roast, then layer with some sauteed spinach, meat, oregano, slice of tomato and cheese for mini pizzas
Make your own pumpkin custard with pumpkin puree, punpkin spice, eggs and then bake.
P.S. I am not low carb, I (at least when I am being good) avoid grains and keep sugars low.

All those recipes sound great. But that salad idea? Sounds AMAZING! I do make a pumpkin custard and keep it around for desserts with a little homemade whipped cream. So good!

I’ll join in. I maintained a healthy weight and got over some serious bingeing issues with LC. Fell off the wagon last year after a back injury and months of steroids and I am back on. I have to lose 30 pounds (EEEK!). I am starting pretty low carb to wean off sugar and carbs.
I have stocked the fridge with easy low carb items (e.g. cut up veggies, organic cheese sticks). I also make Deviled eggs with homemade mayo,
I was unknowingly Paleo when I first started to LC and I was dairy and gluten free until my gut healed and I could handle dairy again. However, for me not having dairy at all was too restrictive. I do limit cheese to 3-4oz a day for the most part and cream/dairy to 2-3 tablespoons a day for the most part as well. I also use coconut milk and almond milk a lot, too, as it is lower in calories for certain things.
I don’t eat much processed food though and make everything from scratch including ketchup and ranch dressing (happy to share recipes if anyone would like?).
I try to get the bulk of the carbs in my diet from fresh vegetables, greens etc. Cauliflower is an amazing resource for low carb cooking – I use it for everything from fauxtato salad to making a lower carb, healthier and fibre-rich bechamel-style sauce for lasagnas and more. I am happy to share those recipes, too 🙂

Yo, here! I lost 130 pounds eight years agon with LC – maintained perfectly until the wedding, now DH & I each need to drop 20 “newlywed” pounds 🙁 which we will do w LC! Lean protein & veggies, small amts of fruit, some cheese & nonfat dairy, some fats. I love LC!!

I have lost quite a bit of weight in the past on South Beach. They have a Quick and Easy (I think that’s the name; it’s the one with the gold cover) cookbook that has a ton of amazing recipes in it!

I could use some veggie-friendly low-carb dinner ideas too! I started WW a couple weeks ago and after tracking I’m losing, but have a lot of room for improvement. I need to ditch some carbs here and there!

I just started back up on it two weeks ago. I lost a lot of weight doing it last year for my wedding and then got burnt out, got into baking, and gained it back, yikes! So far I am down 2 lb since last week. I have a dinner list we try and pull from, I can provide recipes if needed!
ground porklettuce wraps w/veggies
Chicken on the bone (with or without roasted garlic or goat cheese stuffed under the skin)
Chicken with pesto or red sauce and mozz cheese
grilled lamb meatballs with pine nuts & grilled eggplant
all beef chili
skirt steak w/chimichurri
mozz stuffed large meatballs (no breadcrumbs)
bbq chicken (or anything else bbq’d – spice rubs, not sauce)
chicken w/white wine lemon sauce
ropa vieja w/jalapeno poppers
grilled steak w/gorgonzola
chicken satay w/veggies
chicken cordon bleu
gumbo sans rice
rack of lamb
parmesan chicken nuggets
brats and sauerkraut
chicken w/bolognese sauce
Chicken kebabs, with either yogurt & aleppo pepper marinade or cajun seasoning

@nixietink: I’m on the LC diet also my wedding is in May. So i would like to hear some good recipies also! LOL . But i need to lose about 30 lbs would be nice. So if i come across any i will let ya know. I have completely cut sugar out of my diet and also carbs

I should be eating low-carb to keep my blood sugars under control, but I have serious problems sticking to it since I’m not much of a meat or egg person.
I believe low-carb/high-fat is the best way of eating for my body…just really difficult to stick to because I’m such a picky eater. When I am strict with sticking to it, weight just melts off and I have lots of energy, feel satisfied for hours, and have a nice flat tummy.
I don’t eat seafood, bacon, ham, pork roast, chicken on the bone or chicken with dark meat, or any fatty meat which kind of eliminates many foods.

I just started a low carb diet 10 days ago. I have never tried this before but I am thrilled with the results so far. I don’t count how many carbs exactly or anything, I just try not to eat too many and make better choices, so instead of pasta with my chicken i have a salad. Also i read that if you do not eat any carbs after 2PM it will help you kickstart your weight loss. So far I have lost 7 lbs! But it isn’t just hte weight loss making me happy, I feel more energized and just better overall. I am a major carb monster but I dont even crave them anymore. but my first three days SUCKED! I am so happy to have changed to a low carb lifestyle 🙂

I’m actually Paleo- I only eat meat, veggies and fruit. However, to lose weight, I cut out starchy veggies and super sugary fruits to keep things more “low carb”.
It’s worked very well! I lost 30lbs in 5 months. Here’s what I ate a LOT of:
I used to make my own salad dressing with apple cider vinegar, water, mustard and a couple drops of stevia. Zero calories, sugar and carbs. Tastes not too bad. I’d toss it with some greens and whatever meat I could get my hands on. I like to buy frozen shrimp and dethaw about 10 or so whenever I feel like it to toss it with veggies or salad.
I would make beef stew with beef broth, non starchy veggies and cook one small potato with it. Towards the end I would mash the potato and put it back in the stew to thicken it. (Less carb and more nutritious than thickening it with flour or cornstarch)
Stir fry nights are BIG. Any meat you want, non starchy veggies, and just watch the sugar content of any stir fry sauce you use. Omit the rice or noodles and voila!

I find it really difficult to stay LC unless I have quick, easy to prepare foods ready at any given time. I hate prepping ingredients and cooking, I’d rather just grab a frozen meal from the freezer than take the time to cut up my fresh veggies. I pretty much eat the same thing every day when I’m LC-ing, too many choices and I stray.
A typical day for me:
Atkins caramel cafe shake before work
1/8 cup raw pumpkin or sunflower seeds midmorning at my desk
Lunch is shredded chicken breast with red hot sauce in a lettuce wrap
Sugar free jello
Another serving of seeds and tea mid afternoon
Before I head to the gym I have a few slices of deli meat rolled around bell pepper and a cheese stick
Dinner is either shredded chicken or tuna in lettuce, or an omelet
2 hard boiled eggs
A whole bell pepper cut into 4 “cups” filled with ham and ricotta and black pepper
And before bed I have 1 square of super super dark chocolate
It’s so much food that I’m always full and actually have trouble eating this much. But I’m barely hitting 1200 calories a day, so I know i need to eat it!
