I have (admittedly very mild) PCOS and lost about 20 pounds before conceiving.  I had VERY good success with the South Beach Diet (and Darling Husband loved the recipes!), though I think we may switch to a more paleo-type diet after baby is born.  We currently subscribe to E-meals, and they have a paleo option, as well as low-carb.  Having a plan for meals and snacks was huge for me.  Good luck!

I found some good recipes on this site: http://www.kalynskitchen.com/  Also, sparkrecipes.com does have some South Beach-friendly recipes if you search.  skinnytaste.com has AWESOME recipes, but it’s geared more to the Weight Watchers crowd, so you’ll need to read on your own whether a recipe is South Beach-friendly.

I did end up buying several South Beach cookbooks on my Nook Color–I was able to really stay organized with my favorites that way.  But, different things work for different people!

They still aren’t cheap–and if they were lendable, I’d totally lend them to you.  But like I said, it was worth the cost to me to be able to stay organized, highlight/bookmark our favorites, etc.

I have PCOS but don’t have many of the traditional symptoms such as weight gain.  However, I have been very conscentious of those symtoms and try my best to stay healthy.  One tip that I think is very helpful is to prepare easy snacks ahead of time and always keep them handy.  If you have a handful of fruit, veggies, nuts, rice cakes, etc. pre-prepared in baggies it is really easy to reach for that between meals which will alternately help you eat less during normal meal-times.  Having 6 small meals per day is much better for you than three larger ones.  I’m a major carb lover as well so I completely understand your plight, but by eating a snack and glass of water before, you’ll be less hungry at meal time.

In addition to that, do a whatever exercise you feel comfortable with.  Whether it’s walking the neighborhood or using light weights at home, just add an extra activity to your day.  Once you feel comfortable with that, add a little more.  If you add too much at once, it’ll be more difficult to build a routine.  Try using light weights while watching your favorite shows, or during an event that already feels routine.  That way you will naturally associate the extra activity with your routine.

Congratulations on your engagement!  And hope that helps =)
