a happy client presented my fi with a box of very large red bell peppers (may be also called capsicum peppers) which was lovely
thing is, we dont have any room in our tiny freezer and im a bit baffled as to what to do with 20+ large red peppers. in the past ive only ever roasted them and eaten them on the side or as part of a salad
itd be a shame if they went off, so i need to think of creative ways to use them so they dont go to waste. we dont really know anyone who lives close to us to give them away, and i dont know if i t might be a bit odd to ask neighbours we dont know if they want any

cut them up and put them in spaghetti sauce, freeze any if you can, take any extras and give to co-workers!

I’ve made pasta sauce with bell peppers before. They are good raw, dipped in hummus. You can also make red pepper hummus. You could also use them on pizza, tacos, and fajitas.
Giving some to the neighbours could be a good way to get to know them!

Put them directly on the grill. Roast. Peel their skin off and stick in oil with garlic. They can last like this for a long time (preferrably in jars).

Oh and stuffed peppers! Those also freeze decently well, so you could make a large batch. Mix up some hamburger, tomato paste and rice.

You can make roasted red peppers, can them and save them for later so it doesn’t take up freezer space!
Also, stuffed peppers. Yum.

Or maybe have some people over and have it as part of a veggies and dip platter !

I would make stuffed peppers (my favorite 🙂 ). You can also pickle peppers- which would preserve them for months and months.

Make red pepper jelly! It’s to die for. Serve it on crackers with cream cheese…yum!
Super easy to make and you can give jars away to friends/family if you want. Or you can build up a secret delicious stash of jelly for yourself lol!

Roasted red pepper tomato soup! I’ve never made it so I don’t have a good recipe to share, but I enjoy eating it.

thanks for all the suggestions. i might try to give away around 8-10, leaving me another 14 or so to cook with. fajitas, soup, and stuffed peppers for 2 sounds like my weekend plan!!

Once you cook them they decrease a lot in size. Try roasting them and then dicing them and freezing them in ice cube trays. Then you can take out a cube at a time later when cooking.
Also, Darling Husband can easily eat 3 at a time when I roast them and slice down one side. Then I make a roll with a spread of pesto, mozzerella and then put them back in the oven till the cheese is melted.

I’m with @AB Bride, I loooove raw red peppers with hummus. So good!
