I’m a vegetarian (couldn’t imagine being a vegan, but if she doesn’t like dairy I guess it’s not a far throw!) and I love cooking meals for myself. I started out by going to Whole Foods, etc, and seeing what they had (they have a huge vegan offering, too) and then ended up substituting tofu, seitan, soy, and mushrooms for meat in some recipes. I’m even making Julia Child’s beef bourguignon vegetarian soon! 

You really just need to develop a feel for cooking, and then make meals beforehand. Otherwise you can easily get in the trap of only munching fruits and veggies or grains, which aren’t enough sustainable energy for the whole day. There are plenty of vegan cooking classes, at least around here, I’d really recommend that she take one.
