I did Veggie Quesadillas last night and I’m doing green chili chicken enchiladas tomorrow and fish tacos on Thursday.  Tonight I’m doing burgers on the grill because the weather is nice and I don’t want the meat to spoil.  I love mexican (well “american” mexican) food!

Ooh, coconut margaritas sounds phenomenal! I originally planned to make spaghetti and meatballs, but started regretting that decision when I started seeing all of the Cinco posts on Facebook. So I have revamped my plan and will make pseudo Mexican pasta instead: Jalapeno turkey sausage with Rotel, black beans, corn, and green pepper over pasta with a sprinkle of Mexican cheese blend. I may or may not throw in some enchilada sauce for good measure.

We are making taco bowls (basically just taco fillings in a bowl since we don’t eat tortillas/chips anymore)! SO EXCITED.

We are not doing anything special at home today since all life form must come to a complete hault because my FH’s Apple Watch was delivered at 11:42am today, but we had a fun lunch at work. We catered tacos and that came with soft and hard shell tacos, 3 different meets, rice, beans, and toppings.  I made guacamole and decorated the room.  It was great.  Happy Cinco de Mayo Bee’s!

I wasn’t planning on it, but now I’m tempted. I have both Honey Lime Tilapia Tacos and Spicy Bean Burritos planned for later this week… maybe I should switch one to tonight (was planning Eggplant Mini Pizzas…).

And I definitely want to swing by the ABC on the way home and grab a bottle of Skinnygirl Margaritas – is it sad to drink alone? Darling Husband works late.
