Very cool idea.  We are doing BBQ as well for our rehearsal.  Make sure you have some cornbread!

Well, I am having a southern wedding but I’m not having TOO much of a southern meal. I’m having pork tenderloin with onions, amberjack, chicken with spinach, assorted veggies, mashed potatoes, shrimp, mini ceaser salads, cheese set-up. I may change a few things around but that’s pretty much it!

I LOVE southern food!

I am soooo not southern (from NJ) but we’re getting married in Charleston (where my fiance’s parents live.  I’m calling my menu theme comfort food w/ southern flair.

Mini tomato tartlettes (not southern but yummy)

Low Country egg rolls filled with pulled pork and grits and with a jalapeno marmalade

Shrimp and grits action station w/ chef sauteing shrimp

Beef carving station w/ mashed potatoes and rolls (needed something traditional for the northerners who might be scared of grits 🙂 )

Soup station served in mini mason jars (so cute) : She crab and tomato basil w/ mini grilled cheese

Salad station: Make your own wedge salad or salad skewers

Late night snack (maybe if in budget): Mini beef or pulled pork slider and mini fries.

Yes, I’m obsessed with mini things :).

My SO is stuck on having a pot luck wedding.  Once I get the ring on my finger and feel a little more comfy putting my foot down, I think I’ll be able to convince him a buffet is the way to go.  🙂
