This type of diet normally works for me, but this time that weight isn’t going ANYWHERE. Maybe it has something to do with turning 30? Last time it melted right off, but this time it’s being so stubborn. I am not really sure what to do. I am glad it’s working for you, though!
What are your favorite recipe sources? I’ve found that there are a select few Hungry Girl recipes that can be modified for low carb, to very yummy effect. One is the 1-2-3 Alarm Chili–replace the carrots and corn with chickpeas and zucchini (actually, this time I used leftover spaghetti squash) and increase the amount of turkey if desired. It’s great.
My breakfast staple is nonfat Starbucks lattes with sugar free Pumpkin syrup from Target. I wonder if that could be somehow stalling my weight loss? So irritating.

1/2 cup unsalted butter
1/2 cup natural peanut butter
2 ounces cream cheese, softened
1 cup granular Splenda or equivalent liquid Splenda
2/3 cup whey protein powder, vanilla flavor (2 scoops) *
Melt the butter and peanut butter together in the microwave on HIGH for 1-2 minutes; whisk well. Whisk in the cream cheese until well blended and smooth. Whisk in the Splenda then the whey protein powder and blend well. Line a 7 x 5″ baking dish with wax paper or nonstick foil. Spread the fudge mixture in the pan and chill or freeze until set. Cut into 20 squares. Store in the refrigerator or freeze.
Makes 20 pieces
Can be frozen
* The carb counts for this recipe are based on whey protein powder that has 3 carbs per scoop (1/3 cup).
With granular Splenda:
Per Piece: 105 Calories; 9g Fat; 4g Protein; 3g Carbohydrate; trace Dietary Fiber; 2.5g Net Carbs
Per 2 Pieces: 211 Calories; 18g Fat; 8g Protein; 6g Carbohydrate; 1g Dietary Fiber; 5g Net Carbs
With liquid Splenda:
Per Piece: 101 Calories; 9g Fat; 4g Protein; 2g Carbohydrate; 1g Dietary Fiber; 1g Net Carb
Per 2 Pieces: 201 Calories; 18g Fat; 8g Protein; 4g Carbohydrate; 1.5g Dietary Fiber; 2.5g Net Carbs
I could never do strictly Keto, but low carb works sooo well for me! I need to go back to it, but… ugh, bread.
@EffieTrinket: I’ve been doing this lately…However my staple is just black coffee with half and half in the morning.
@VikingPrincess: Thank you, I will have to try that. I cheated today and had a small cup of International Delight Mocha I LOVE that stuff and didn’t want it to go to waste… This is hard! Yummy beverages are my downfall. I could not stomach the bulletproof coffee.
My husband and I started South Beach Diet 6 months before our wedding. I weighed 155 in May and 122 on my wedding day in November! I also had to have my dress taken in 4 sizes.
I used Kalyns Kitchen website for lots of recipe ideas that are low carb. I like South Beach because it’s not so high fat/high calorie like Atkins or some other low card plans which made it easier to transition into a healthier lifestyle overall.
You only go very limited carbs for the first two weeks then you slowly add back in healthy carbs like fruit and whole wheat bread, rice or pasta.
We also exercised regularly but food was a huge key in my weight loss.
