Depends how strict you are
Todays lunch was spinach salad with red onion, tiny bit of feta *optional, raisins, chicken thigh and reduced balsamic vinegar and avocado (literally took a bottle of cheap balsamic and reduced it in a pan by 1/2- sooo good)
Yesterdays lunch, was shredded cabbage, mint, cilantro, leftover thin sliced steak, peanuts, green onion, sprouts and shredded carrot with a vietnemese dressing (rice vinegar, fish sauce, lime juice, bit of honey, garlic and then I add olive oil)
Of course there is always leftover dinner
Tuna or egg salad on a pile of greens (you could use just vinegar, mustard and oil, but I use some greek yogurt)
Big salad of diced tomato, cucumber, cilantro, olive oil, red wine vinegar, oregano, avocado, diced chicken, red onion, garlic salt, paprika,
Those are cold ideas… but really you could east a lot of stuff that is hot.
Make a veggie bake lsagna style, layer zuchinni slices and eggplant as you would the noodles, make the stuffing out of your choice of meat along with shredded carrot. Sauce and mix the meat mixture with some eggs to help hold the form. Precook the veggies so the water releases.
