I’d cut it into thick veal chops and grill it with rosemary, garlic and olive oil. If you’re not planning on grilling it, dust the chops with flour then sear in hot olive oil, season with garlic, rosemary and maybe some thyme, lots of black pepper, add some mushrooms and add some chicken or mushroom broth to the pan to let the chops finish cooking without burning. Remove the chops and reduce the pan juices/broth till it’s nice and thick then remove from the heat and swirl in about a teaspoon or two of butter, swirl it around so it melts evenly and pour that over the chops.

Veal is so delicate that I really prefer to cook it as chops rather than a standing rib roast, so it’s nice and medium-rare in the center without drying out.  

If you want to cook it as as standing rib roast then coat it with olive oil, garlic powder, rosemary and black pepper till the herbs form a coating/crust, sear it in olive oil then pop it in the oven till done.
