So I am just now getting around to using the crockpot we got as a wedding present and I am in love! It is so nice to be able to put some items in there overnight and then come morning, I have a delicous lunch! So far all I know how to make is beef stew and chicken with vegetables. Do any bees have any healthy easy crockpot recipes they can share?

I make a really easy one where you put in frozen chicken breasts, pour a packet of dry italian salad dressing mix, and then pour a cup or maybe a bit less of water over it.

4 chick breasts
1 jar salsa
1 pckg. taco seasoning (or homemade taco seasoning–much better)
Cook 4-6 hours. About 30 minutes before you are ready to eat, add one brick of cream cheese. TO. DIE. FOR.
Many tweaks can be done to this as well. I sometimes add canned tomato as well.

I have a recipe VERY similar to yours. Instead of 1 packet of Italian dry seasoning, add 2 packets AND the juice from a jar of jalepeno’s (or add the jalepeno’s if you’re brave enough). Cook for about 6 hours and you have a yummy meal. It alone, in a tortilla, or on bread. YUM!

Chicken and bean tacos
Bunch of frozen chicken breasts (4+)
can or two of beans (i go with pinto)
packet of taco seasoning
jar of salsa
cook on low for 8 hours. Shred the chicken and mash the beans a bit before you put the chicken back in. I entertain a lot with this and make a big taco bar. Always goes over well. I also will freeze a small portion (1/2-1 cups) and will defrost for a quick lunch or dinner and put over lettuce and add a bit of cheese. Amazing!

I love to put in a pork roast, add TONS of carrots (like a bag and a half of little carrots), celery and potatoes. Then I add water to the point of almost covering the roast (usually around 1 1/2 cups). Before putting my roast in I make a rub of salt, pepper, garlic salt and maybe some random herbs. Let sit for around 8 hours and have an amazing dinner for that night!

I make turkey chili in mine….
1 lb ground turkey
1 can diced tomatoes
1 jar of salsa
1 can red kidney beans
1 small yellow onion
chili powder (to taste)… I use like half the container, but I like spicy
cumin (to taste)
salt and pepper
I just cook up the turkey meat and onion first, but you don’t have to….
Throw it all in the crock pot for at least 4 hours on low…

Chicken/Beef + BBQ sauce (about 1/2bottle of your favorite) + 1/3c beer (drink the rest, or use water). Low for 8-12 hours, shred, toss with juice/more sauce. –> lazy-girl’s BBQ
Sometimes I bulk it out with vegetables (finely chopped onion, carrot, etc) to make it more healthy.

I love crock pot pot roast!
1 chuck roast (trim off visible fat) cut into chunks, 1 bag baby carrots, 1 onion (quartered), 1 can of cream of mushroom soup. Salt and pepper the beef, then dump it all in and cook on low for 8 hours.

Southwestern Chicken and Bean Soup
• 1 tablespoon vegetable oil
• 1 pound skinless, boneless chicken breasts, cut into 1-inch pieces
• 1 3/4 cups Chicken Broth
• 1 jar Chunky Salsa
• 3 cloves garlic, minced
• 2 teaspoons ground cumin
• 1 can (about 16 ounces) small white beans, rinsed and drained
• 1 cup frozen whole kernel corn
• 1 large onion, chopped (about 1 cup)
Throw all the ingredients in the crockpot and cook on low for 8-9 hours.
