Hi, Bees –
I was wondering if anyone out there knows how to make homemade pita bread and can suggest how I can improve mine. It’s kind of tough and chewy, and I don’t know if I’m kneading it too much, not kneading it enough, etc? I would like it to be lighter and fluffier.
I haven’t tackled homemade tortillas yet, but that’s something I’d also like to learn how to do, so if anyone can recommend a recipe, that’d be great!

im going to try a few tortilla recipes, hopefully tomorrow! even though im not vegetarian, lard gives me the heebie jeebies so im going to try a lardfree recipe for flour tortillas!

in the comments section of the second one, someone mentions adding sugar to make tortillas less tough. 1tsp per cup flour – not enough to change flavour or make it sweet.apparently it keeps the flour from forming longer chains of gluten (protein), which in turn prevents things from being tough and absorbs water which helps keep them soft and moist
this might be the same for pita bread?
