I chimed in already on this thread, but since we got married last weekend, plans have changed lol. My Mother-In-Law offered to wrap up part of our cake and freeze it for a year, hahaha. Hope it stays semi-fresh!!

yes! We’ll try it at least. probably won’t be that great because we didn’t wrap it up too well.

We just had our cake from a year ago last night and it was delicious! I posted the freezing/defrosting method here if anyone wants to check it out http://boards.weddingbee.com/topic/we-had-our-cake-one-year-later

We’re slowly eating ours- it’s only been about 4 months but it’s getting to be hurricane season and we’ve heard some horror stories about losing the cake. We’d rather eat it early than have it get soggy and moldy should a storm come through.
It’s been delicious. We put it in an air tight tupperware.

we did! we actually preferred it to our cake on the day of our wedding! probably because it had a layer of chocolate ganache that the other layers of our cake did not… but still. it wasn’t too bad and i’m a sucker for cheesy traditions.

We are. And it will be really gross. See, I asked my DH if he wanted to do that and he said no. So I put the cake in the fridge, and we went on our honeymoon. Two weeks later he said he DID want to do that. Well it’s too late by then for the cake (it’s dried out!) but I wrapped it up and put it in the freezer. But I didn’t do any of the things you’re supposed to do to keep the flavor/moisture so it’s going to be raunchy. Our anniversary is this weekend, I’ll let you guys know!
(I also plan on baking him an amazing replica fresh and decorating it and everything! So at least there’ll be good cake!)

We’re going to give it a try. Why not? Worst case, we don’t eat much of it.

my mother in law ate ours when we were at our honeymoon. my husband stored the cake in their freezer because ours had no room but didn’t tell his mom. she doesn’t know about these ‘traditions’ so she ate it. she even asked us to get another cake because it tasted so good hehe.

We did not have a cake but instead a dream whip cherry pie sort of dessert. I am going to make them this weekend for our anny. It was his great grandmas recipe and so light and good. Its a perfect summer treat! I plan to do it every year.

Yes we kept our wedding cake.. We sealed it with the seal a meal thingy and sucked the air around it… Hopefully it will be fresh for our first anniversary!
