Every restaurant is different in what they offer and are able to do. You will have to contact the restaurant directly to find out the answers to your questions. Many venues are not practical in tems of kitchen layout/availability to be able to cook a good steak for any number of people, large or small. Also, keep in mind that it will be impossible to cook that many steaks to order in a timely fashion as they take a very long time to do.

We had our reception at a steak restaurant and it was fabulous.

I am in the high-end event business and I work with caterers all the time. I have never heard of one of the chain steakhouses doing off-site catering. Both of the restaurants you mentioned use commercial ovens where temperatures reach 1400 degrees to cook their steaks.

You best bet would be to find a catering company who is equipped to cook their food offsite and bring it to your location in heated carriers. They will also have the added benefit of having trained banquet staff to serve the food.
